Alfredo. Do you know what is better than alfredo? Alfredo made from scratch in under 20 minutes..with only 5 (okay, 7 if you count salt & pepper) ingredients? Yeah, I went there.
We eat this for dinner probably once a week because it is seriously SO delicious! I try to save it for a day of the week where I know I will be short on time, but let’s be honest, it’s so good that I will make it even when I’ve got all the time in the world.
This is a fool-proof recipe- great for newbies, seasoned Instant Potters, and totally kid approved!
Okay, let’s do this thang.
Chicken broth, heavy cream, minced garlic, salt, pepper & noodles broken in half go into the pot. Make sure that all of the noodles are covered in liquid.
Manual high pressure for 6 minutes. (I like my noodles with a little bite to them, if you like yours softer I’d recommend cooking for a minute or two longer.) Let it naturally release the pressure for 6 minutes. The display will read L0:06 and then you can quick release.
It will be very liquidy when you take the lid off. That is a-okay and totally normal. Let it sit and cool for about a minute or so (very important!!) and then add in some parmesan cheese. You’ll want the real thing. None of that powdered stuff.
Gradually stir in the cheese. The cheese will melt into the sauce and thicken it.
Aaaand then, serve it up and say Bon Appetit! Serve alongside some Oven Roasted Broccoli!

Instructions

- Set your Instant Pot to Manual for 6 minutes (I like my noodles with a little bite to them, if you like yours softer I'd recommend cooking for a minute or two longer) and then let it naturally release its pressure for an additional 6 minutes then quick release.
- Let the noodles and sauce sit for a minute or so. THIS IS VERY IMPORTANT. Your cheese will not melt into the sauce if it doesn't cool for a minute or two.

Leftovers are best when you add a splash of milk in after it is reheated.

Would tripling or quadrupling the recipe work just as easily as doubling?

Hi Stephanie- Instead of tripling or quadrupling I would suggest just making 2 doubled batched. When we get that much liquid into the pot, it will take a significantly longer time coming to pressure, which may overcook the pasta. It will take the same amount of time to cook two batches separately (or get yourself another Instant Pot. ๐ ) as it would to quadruple the recipe. Hopefully that makes sense!

Excellent recipe! I added four raw chicken breasts on top and pressure cooked for 8 minutes. I seasoned the chicken with salt, pepper, garlic powder. Otherwise followed the rest exactly and was very pleased! Kids and hubby approved too!

Yes! With the smaller size, just stay close while you are releasing the pressure, pasta recipes tend to bubble up and get a little spitty out of the vent. If this starts to happen, just close the vent and wait another 30 seconds or so before releasing the pressure again. Good luck!!

This is pretty darn tasty. I topped my bowl with some sliced Italian sausage and it was delicious. I used the grated Parmesan cheese in the โgreen canisterโ and the sauce still turned out pretty thick and flavorful. Very easy, delicious, decadent meal.

Not that weird- my son is the same way! ๐ You could substitute penne easily! No need to adjust the cook time.

Heavy Whipping Cream has a high fat content which makes the cream stabilize while cooking under pressure. This means it won’t curdle.

Fettuccine noodles will need a cook time of 8 minutes with an 8 minutes NPR. ๐

When you double the recipe, you double the liquid as well? It seems like a lot of liquid when doubled.

Yes, you’ll double the liquid as well. The pasta will soak up a lot of the liquid as it cooks. I’ve double the recipe many times without any issues. ๐

Yes, the cook time will stay the same. It will take a little bit longer for the Instant Pot to come to pressure but the cook time will stay the same.

All I can say is “Wow!” I made this last night for dinner, it was very easy to make, and the results were amazing!
I did add some crumbled bacon, which I cooked in my Ninja Foodie Grill (my second most favorite kitchen appliance after my Instant Pot!) I added the bacon into the mix at the end, then took the remainder and sprinkled it on top of the linguine.
Folks, if you want a dish that definitely tastes as if you ordered it at your favorite Italian restaurant, this is IT!

I was wondering if you could add some broccoli, carrots, squash etc. in a foil packet on top, or something like that, to be able to cook them at the same time and add in at the end?

The cook time for veggies in the Instant Pot is much shorter than the cook time of the pasta which would result in some really mushy veggies, unfortunately. I generally just steam my veggies in the microwave while the Instant Pot does it’s thing with the pasta.

Hi Andrea- the broth gives the dish a lot of flavor, so if you substitute water, you’ll need to add quite a bit of salt and possibly other seasonings to still have a flavorful alfredo.
