Oven Roasted Broccoli- Quick, No Fuss Side Dish

I am going to admit something to you here.. I used to tolerate broccoli in meals, LOATHED broccoli alone. Then, once upon a time (last week!) instead of steaming my broccoli, I tossed it in the oven with some carrots and roasted them while dinner was going in my Instant Pot.

MY LIFE WAS FOREVER CHANGED. You guys, I’m kind of in love with broccoli now. I have roasted broccoli every. single. day. since.

I’ve eaten so much that Dan thought I was pregnant. Spoiler alert: I’m not. It’s just THAT good!

How to make Oven Roasted Broccoli + Tips!

First, break your broccoli into small, bite-sized pieces. Arrange on a large cookie sheet. Be aware that the broccoli will shrink A LOT while roasting, so load that pan up!

Next, I take my Canola oil spray (my non-stick cooking spray) and lightly coat the broccoli. Some will toss the broccoli in a small amount of canola oil, but I find they get overly saturated with oil that way. I like the spray much better.

Then I season the broccoli with salt and pepper. You can for sure let your inner creative out on this step! Garlic, seasoned salt, lemon pepper.. all would be delicious!

Roast in the oven at 450° for 15-20 minutes, shaking the broccoli around the pan at the halfway mark.

The broccoli will become slightly charred and crispy. There will still be a slight snap to the broccoli, which I completely love.

P.S. Sprinkling some powdered parmesan cheese on the broccoli is AMAZING!!

Ingredients

  • 1 head broccoli
  • Canola Oil Cooking Spray
  • Salt and Pepper to taste

Instructions

  1. Preheat oven to 450°.
  2. Break the head of broccoli apart into small, bite sized pieces. Arrange on a cookie sheet.
  3. Lightly spray the broccoli with the Canola Oil Spray.
  4. Season with Salt and Pepper.
  5. Roast in the oven for 15-20 minutes, shaking the pan to move around the broccoli halfway through.
  6. Serve hot!

Notes

You can use as much broccoli as you need- just note that the broccoli will shrink quite a bit as it roasts!

    How long did you bake it with the carrots?

    About 20 minutes. The carrots still had a slight crunch to them but that is how I like it. ?
