Brownie Mix Cookies- The ultimate Boxed Mix Hack!

Sometimes (okay most of the time!) there are just not enough minutes in the day to accomplish everything. I am fairly certain I am not alone in this.

There are also sometimes that you just need some chocolate.. am I right? I know that I am definitely like that.. almost every day. Again, I’m fairly certain I am not alone!!

Let’s be honest, chocolate can fix the fact that your child just spilled their glass of milk for the 6th time that day or the fact that you are folding the 47th load of laundry for the day.

These Brownie Mix Cookies are the perfect Monday Blue’s cure. They come together in literally minutes, so you can have some chocolate goodness in your belly in no time!

Plus, there are so many ways you can mix these up. I like to toss some peanut butter chips into mine sometimes.

How to Make Brownie Mix Cookies

To make the brownie mix cookies, you’ll take one box of brownie mix, 1 stick (1/2 cup) of melted butter, 1 egg and 1/2 cup of flour. Mix all of that together.

That is it.

No, I’m not even kidding!

Stir in any mix in’s you’d like. I like to add extra chocolate chips, peanut butter chips or m&m’s.

Scoop and arrange on a cookie sheet.

Bake at 350° for 8 minutes or until the cookies are no longer glossy on top.

Wait 5 minutes before transferring to a wire cooling rack.

Best eaten within 24 hours. Although I totally admit to still eating them after a day or two, they just won’t be as chewy and soft.

PS. I think these would make AMAZING ice cream sandwiches.

Brownie Mix Cookies

Prep Time: 5 minutes
Cook Time: 8 minutes
Additional Time: 5 minutes
Total Time: 18 minutes
Servings: 24 small cookies

Ingredients

  • 1 18 oz box favorite brownie mix
  • 1/2 cup butter, melted
  • 1 egg
  • 1/2 cup all purpose flour
  • 1 tbsp milk, if needed*
  • 1 cup mix ins (m+m's, chocolate chips, white chocolate chips etc), if desired

Instructions 

  • Preheat oven to 350° F.
  • Mix together the brownie mix, melted butter, egg and flour. 
  • Add milk to the dough, if needed*
  • If you'd like to add in any mix ins, do that now.
  • Scoop into balls and arrange on a cookie sheet.
  • Bake at 350° for 8 minutes or until the tops are no longer glossy.
  • Let cool for 5 minutes before transferring to a wire cooling rack.
  • For best results, eat the same day they are made!

Notes

*I like to bake one cookie first alone to gauge if I need to add some milk to the dough or not. If your cookies spread fine, then go ahead and bake them all up. If they stay in a ball and refuse to spread, add the milk to the remaining dough and then scoop and bake.
 
All brownie mixes are different. Ghirardelli brand brownie mix usually does not need the extra milk. Betty Crocker usually does need the milk.

  1. I make terrible cookies. I can bake fresh bread, gorgeous artisan loaves, am famous for my cheese biscuits, but I just can’t make decent cookies. Until ur recipe today. They were easy and super yummy. I rolled the balls in powdered sugar to get a crinkle effect and will now be baking them for our school care package cookie project- and I won’t feel bad that done poor kiddo would be getting yucky cookies! The pinch of sea salt is a great idea!

  2. These were amazing and SO easy! My daughter and I are always coming up with ideas for recipes together, and she challenged me to make a brownie cookie, which I had to google and your recipe came up. We also added chocolate chips to the mix. After sampling (a few), she said they reminded her of hot chocolate, so we poked in some mini marshmallows during the last minute of baking. Perfect. Honestly I can’t think of a cookie that I’ve liked better. We’re going to make them again during the holidays and add peppermint!

  4. I heard you could put a 1/c cup of baileys irish cream into brownie mix. Would it work in these cookies? How much should I try?

    1. Hi Liz- I am afraid that there would be too much liquid and the cookies would spread really thin. You could try to add 1/4 cup butter and 1/4 cup bailey’s and give that a shot. I’m not sure what the outcome would be, but I think that would be your best bet. Good luck!!

  6. I made these recently, but I reduced the amount of butter slightly, added one tablespoon of orange juice and the zest from one orange to make chewy chocolate orange cookies. These may be the best cookies I have ever eaten! And so easy! Thank you for the recipe! ⭐️⭐️⭐️⭐️⭐️

  7. Loved this recipe! I made the dough and froze them in balls first. This seemed to work well, so they didn’t get too flat. used dark choc brownie mix and semi-sweet choc chips. YUM Thank you!

  8. i decided to give these a whirl tonight for churxh supper tomorrow night and let me tell you – this recipe was trial and error for me… my mix was 19.9 oz. dark chocolate betty crocker and i was worried they wouldn’t come out right because if the extra dry ingredient BUT they mixed up just fine and then added in peanut butter chips!!!! so the first batch was soooo gooey i couldn’t get them off the sheet without them folding and rolling into themselves, the second batch i baked a smidge longer and those had to be chiseled off the cookie sheet…. the last few batches i used parchment paper and they came off with ease. note that all batches spread out to about the size of a mcalisters cookie… good news is the one i tasted from the second batch reminded me if brownie brittle so that’s still a win!!!
