Brownie Mix Cookies- The ultimate Boxed Mix Hack!

Sometimes (okay most of the time!) there are just not enough minutes in the day to accomplish everything. I am fairly certain I am not alone in this.

There are also sometimes that you just need some chocolate.. am I right? I know that I am definitely like that.. almost every day. Again, I’m fairly certain I am not alone!!

Let’s be honest, chocolate can fix the fact that your child just spilled their glass of milk for the 6th time that day or the fact that you are folding the 47th load of laundry for the day.

These Brownie Mix Cookies are the perfect Monday Blue’s cure. They come together in literally minutes, so you can have some chocolate goodness in your belly in no time!

Plus, there are so many ways you can mix these up. I like to toss some peanut butter chips into mine sometimes.

How to Make Brownie Mix Cookies

To make the brownie mix cookies, you’ll take one box of brownie mix, 1 stick (1/2 cup) of melted butter, 1 egg and 1/2 cup of flour. Mix all of that together.

brownie mix, melted butter and an egg

That is it.

No, I’m not even kidding!

Stir in any mix in’s you’d like. I like to add extra chocolate chips, peanut butter chips or m&m’s.

Scoop and arrange on a cookie sheet.

scooped cookie dough

Bake at 350° for 8 minutes or until the cookies are no longer glossy on top.

Wait 5 minutes before transferring to a wire cooling rack.

Best eaten within 24 hours. Although I totally admit to still eating them after a day or two, they just won’t be as chewy and soft.

PS. I think these would make AMAZING ice cream sandwiches.

Brownie Mix Cookies

Brownie Mix Cookies are rich fudgey cookies made from only 4 ingredients! Easily thrown together, these chocolate cookies will be your go-to for now on! Easy, adaptable and delicious!
Prep Time: 5 minutes
Cook Time: 8 minutes
Additional Time: 5 minutes
Total Time: 18 minutes
Servings: 24 small cookies

Ingredients

  • 1 18 oz box favorite brownie mix
  • 1/2 cup butter, melted
  • 1 egg
  • 1/2 cup all purpose flour
  • 1 tbsp milk, if needed*
  • 1 cup mix ins (m+m's, chocolate chips, white chocolate chips etc), if desired

Instructions

  • Preheat oven to 350° F.
  • Mix together the brownie mix, melted butter, egg and flour.
  • Add milk to the dough, if needed*
  • If you'd like to add in any mix ins, do that now.
  • Scoop into balls and arrange on a cookie sheet.
  • Bake at 350° for 8 minutes or until the tops are no longer glossy.
  • Let cool for 5 minutes before transferring to a wire cooling rack.
  • For best results, eat the same day they are made!

Notes

*I like to bake one cookie first alone to gauge if I need to add some milk to the dough or not. If your cookies spread fine, then go ahead and bake them all up. If they stay in a ball and refuse to spread, add the milk to the remaining dough and then scoop and bake.

All brownie mixes are different. Ghirardelli brand brownie mix usually does not need the extra milk. Betty Crocker usually does need the milk.

  1. I have a cookie exchange coming up and would love to bake these a few days in advance, do they freeze well? Would they taste alright after being in the freezer a couple of days?

      1. 5 stars
These are delicious!! Made these for my friend’s birthday today! I added some sprinkles on top!!

  2. Mine did not work at all. They spread all over the cookie sheet looking like a very flat cake, Will see if they can be cut into squares or shapes to be eaten.

    1. Any time I have used melted butter for a cookie recipe, I have chilled the cookie dough balls before baking. That might be why they turned out so flat. I’m trying the recipe tonight.

  3. Hey, I really love this idea, but could I make the cookie dough in advance, freeze the dough, and bake it a day or two after?

    1. That should work just fine! Just allow the cookie dough to sit at room temperature for about 15 minutes prior to baking.

  4. These were delicious. I made them ‘as is’, but then once wanted to make them ahead and still be fresh and softer than the brownie-like ones. I added 3/4 c of Greek nonfat yogurt and 1/3 c of cake flour. I added 1/3 c each of white and semi-sweet choc chips and baked them a little longer than the original recipe, so 10 minutes. They were soft and delicious.

  5. Would i be able to use margarine im out of stick butter and unable to get to the store and i really need to make these for a party tonite!!!!???

    1. Hi Cathy- Sorry I am just seeing this now. I haven’t ever tested these with margarine so I am unsure of what the outcome would be. Sorry about that!

  6. I’d love to make these today, but I’m in Canada, and our Betty Crocker Brownie Mixes (and all other brands, too) come in 15.5 ounce (440 gram) boxes. Will these turn out OK if I use the smaller box? Could I decrease the butter by a tablespoon maybe?

    1. Hi Debbie, I think you are on the right track here. Try decreasing the butter, you may have to experiment a little to get the exact right amount but I’m sure you’ll nail it in no time!

  7. making these as i type and so far they’re turning out great, i did a couple with marshmallows, a couple with chopped mixed nuts, a couple with sprinkles, a couple with m&m candies and a couple plain.
