Brownie Mix Cookies- The ultimate Boxed Mix Hack!

Sometimes (okay most of the time!) there are just not enough minutes in the day to accomplish everything. I am fairly certain I am not alone in this.

There are also sometimes that you just need some chocolate.. am I right? I know that I am definitely like that.. almost every day. Again, I’m fairly certain I am not alone!!

Let’s be honest, chocolate can fix the fact that your child just spilled their glass of milk for the 6th time that day or the fact that you are folding the 47th load of laundry for the day.

These Brownie Mix Cookies are the perfect Monday Blue’s cure. They come together in literally minutes, so you can have some chocolate goodness in your belly in no time!

Plus, there are so many ways you can mix these up. I like to toss some peanut butter chips into mine sometimes.

How to Make Brownie Mix Cookies

To make the brownie mix cookies, you’ll take one box of brownie mix, 1 stick (1/2 cup) of melted butter, 1 egg and 1/2 cup of flour. Mix all of that together.

That is it.

No, I’m not even kidding!

Stir in any mix in’s you’d like. I like to add extra chocolate chips, peanut butter chips or m&m’s.

Scoop and arrange on a cookie sheet.

Bake at 350° for 8 minutes or until the cookies are no longer glossy on top.

Wait 5 minutes before transferring to a wire cooling rack.

Best eaten within 24 hours. Although I totally admit to still eating them after a day or two, they just won’t be as chewy and soft.

PS. I think these would make AMAZING ice cream sandwiches.

Brownie Mix Cookies

Brownie Mix Cookies are rich fudgey cookies made from only 4 ingredients! Easily thrown together, these chocolate cookies will be your go-to for now on! Easy, adaptable and delicious! 
Prep Time: 5 minutes
Cook Time: 8 minutes
Additional Time: 5 minutes
Total Time: 18 minutes
Servings: 24 small cookies

Ingredients

  • 1 18 oz box favorite brownie mix
  • 1/2 cup butter, melted
  • 1 egg
  • 1/2 cup all purpose flour
  • 1 tbsp milk, if needed*
  • 1 cup mix ins (m+m's, chocolate chips, white chocolate chips etc), if desired

Instructions 

  • Preheat oven to 350° F.
  • Mix together the brownie mix, melted butter, egg and flour. 
  • Add milk to the dough, if needed*
  • If you'd like to add in any mix ins, do that now.
  • Scoop into balls and arrange on a cookie sheet.
  • Bake at 350° for 8 minutes or until the tops are no longer glossy.
  • Let cool for 5 minutes before transferring to a wire cooling rack.
  • For best results, eat the same day they are made!

Notes

*I like to bake one cookie first alone to gauge if I need to add some milk to the dough or not. If your cookies spread fine, then go ahead and bake them all up. If they stay in a ball and refuse to spread, add the milk to the remaining dough and then scoop and bake.
 
All brownie mixes are different. Ghirardelli brand brownie mix usually does not need the extra milk. Betty Crocker usually does need the milk.

  1. What is the size of the brownie mix? They have made the boxes smaller in recent years and I know it effects the cake mix cookie recipe.

  2. This recipe is amazing – I figured I had nothing to lose but a stick of butter, an egg and some brownie mix, but the cookies were ready to eat in 15 minutes and very tasty! There are a number of brownie mix cookie recipes on the web but this is the most simple. The batter was so easy to shape into balls. I did add a dash of vanilla extract while mixing up the batter and I sprinkled coarse sea salt lightly over the cookie balls before baking, which added a little extra flavor and made them extra yummy.

      1. Hi Jessica- I would suggest freezing them and then thawing them for a few hours prior to serving.

  3. My mix is still very runny..? Do I had flour or how can I make it to where I can roll into balls?

    1. Hi Dayna- what size of brownie mix did you use? I use an 18.4 oz box. (I’ll add that into the post now, I didn’t realize that info was missing!) for the time being, I would add flour a little at a time. Depending on how much flour you need to add, you may want to add in a little cocoa to keep those cookies nice and chocolatey. Hope this helps a bit!

  4. Are the middle of the cookies supposed to be gooey? When I inserted a toothpick into the center of a cookie the batter was stuck to it and didn’t look done.

    Also, how large are the balls supposed to be?

    1. Hi Jen- I use a #50 scoop with my cookies, which equals about 2 tbsp worth of dough in each ball. The cookies will continue to bake while they cool. Hope this helps!!

  5. I just made these cookies added mini chocolate chips and chopped walnuts wow they are delicious I did add a couple tablespoons of sour cream too

  6. I just made these cookies. Sooooo delicious!! Instead of butter, I substituted a half cup of SmartBalance because 2 of my children can’t have milk products. I also added milk free chocolate chunks. They were a hit with all three of my kids!! I will definitely make these again.

  7. Do you know what size scoop you used? I made them and had more than 24 cookies and they were a bit on the thin side. Still tasted yummy though!! 🙂

  8. I just made these with some chopped maple glazed pecans. OMG! They are soooo tasty and couldn’t be easier. Next time I’ll try peanut butter chips or Heath pieces. Thanks for sharing this recipe. It is just what I was craving!
