Creamy Salsa Chicken Dip- My favorite Tortilla Chip Dip!

This is one of those recipes that I have literally been making for YEARS! I remember vividly the first time I made it, living 2,000 miles away from family with a 2 year old, newborn baby & a grad school attending husband.

I needed to go grocery shopping desperately and ended up tossing 3 things into my crock pot. Salsa, Chicken and Cream Cheese. The results were out of this world!! We ate the chicken on tortillas with rice but now we often make this up as a chip dip.

How to make Creamy Salsa Chicken Dip

First we will start with room temperature cream cheese and salsa. If you need to bring your cream cheese to room temperature quickly, seal it in a ziplock bag and then set the baggie into a bowl of hot water, This will soften the cream cheese nicely within about 5-10 minutes.

Using a mixer, cream the cream cheese and salsa together. Continuing to use the electric mixer, add in the shredded chicken.

Mix until smooth and creamy. You can use shredded rotisserie chicken here or I like to make my shredded chicken quickly in the Instant Pot.

Spread the cream cheese/salsa mixture into the bottom of an 8×8 pan or pie plate.

Top with shredded cheese and bake at 350° for 20 minutes.

Pull out of the oven and immediately top with diced tomatoes, olives, green onions, avocados.. whatever you like!
