Crunchy, gooey & covered with chocolate? Yeah, sign me up for these delicious Costco caramel s’mores clusters.

Costco Caramel S’mores Cluster Recipe
If you’ve been shopping at everyone’s favorite warehouse store (ahem, Costco) this summer, you’ve undoubtedly seen and been tempted by their new caramel s’mores clusters. I’m convinced they created these solely because they saw how well the Fannie Mae’s S’mores snack flew off their shelves last year. But I don’t even care – they are dang delicious. Featuring crunchy golden graham cereal, chewy marshmallows, gooey salty caramel and completely covered in chocolate, this is the snack (dessert?) of my dreams.
But here’s the deal. I don’t need to be spending $10 extra dollars for a tiny bag every time I go to the store, so I’ve decided to make these Costco caramel s’mores clusters from home. And if you thought the store-bought version was good, holy cow your mouth is in for the best surprise ever. Considerably cheaper and way easier than is healthy for me, this homemade s’mores snack is going to be on repeat in your house.

Ingredients in Costco S’mores Snack Mix
- Golden Grahams cereal – You can also use the store-brand too. I think I technically used “Honey Graham Toasters” in this.
- Mini marshmallows
- Caramel dip – I just used regular caramel dip, but can you imagine salted caramel dip? Insane.
- Dipping chocolate – I used Ghiradelli melting wafers, but you could even melt down your favorite chocolate chips if you’d like!

How to Make Caramel S’mores Clusters
- Line a cookie sheet with either parchment paper or a silicone baking mat.
- On your cookie sheet, portion out the Golden Grahams cereal into 24 portions.
- Next, add 3 or so marshmallows onto each pile of Golden Grahams.
- Then warm the caramel dip slightly so that it is easier to stir but is still thick.
- Spoon 1 tbsp of caramel onto each serving of Golden Grahams and marshmallows, using the caramel to glue each serving together. Repeat on all servings.
- Place the entire pan into the freezer for up to an hour or until the caramel thick and set. You should be able to easily use a small spatula to scrape the cluster off of the pan for dipping.
- Melt the dipping chocolate in a microwave safe bowl, following the directions on the package.
- Once melted, dip each smores cluster into the chocolate, coating completely before setting back on the prepared pan to set up.
- Repeat until all clusters are coated with chocolate.
- Let your chocolate set up (either on the counter or in the fridge!)
- Enjoy!

How should I store these s’mores clusters?
Once your clusters have set up, store in an airtight container or bag in the fridge for up to 5 days! Don’t store these on the counter with the caramel.
Do you have any other renditions of s’mores clusters I should try?
I’ve toyed around with the idea of adding salted caramel or flaky sea salt to the top of these snacks to cut the sweetness a little (and I think it would be SO good).

would it work if we made our own caramel?
We tried these over the weekend. They were a big hit!
These are better than the Kirkland ones. I wasn’t a fan of the chocolate, although they were still good. BUT, this recipe is 10 x better. I used hersheys milk chocolate chips and they were delicious! I also made my own caramel as it’s super easy to make. Found the recipe at https://bellyfull.net/caramel-sauce-recipe/ YOU NEED TO MAKE THESE you won’t be disappointed.
Great recipe. However, do not use the caramel for dipping apples, find in the produce section. It is too soft. Chewy caramels like Werther’s or kraft and melt them down. These make the bites chewy and perfect.

Thank you for this. I was thinking there had to be a cheaper version. I was, and still will play around with a bar version to save time. Like mix cereal and marshmallows with caramel and put chocolate on top.
These were tasty but a real pain to make. I used Kraft caramels melted with a little cream and the consistency was great, but softened as soon as I took them out of the freezer. I had to pull them out 1 at a time to dip in chocolate. I agree with another reviewer that making them into bar form would be better. I’ll keep messing with the idea.
