Pico De Gallo- The Best Appetizer
Have you ever been in charge of bringing an appetizer to a party and have absolutely no idea what to bring?? That is me every Christmas.
For a big family party, the girls in my family are always in charge of bringing an appetizer. I am not near fancy enough to eat appetizers on a regular basis. Either that or I am too cheap to pay for the apps at a restaurant.
The latter is definitely true, I only ever drink water when we go out to eat.. I mean, I could get two liters of sprite for the same price as half of a glass at the restaurant! I will always be a (proud) cheapie.
This Pico de Gallo recipe comes together so quickly! All you need to do is dice a few things and then stir together.
Cheap, quick & easy. Even better, it tastes AMAZING. Whenever I have some of this on hand, I tend to eat it for the majority of my meals. #noshame.
How to Make the BEST Pico De Gallo
To make Pico De Gallo, the first thing to do is gather the ingredients. Which for me means take a trip to the grocery store.
I don’t cook with tomatoes or red onions enough to always have them on hand. So if I know I will be making this soon, I’ll pick up the ingredients at the store ahead of time.
For this recipe, you’ll want to pick up some Roma Tomatoes. Any tomato would work, but I especially like to use Roma Tomatoes because they don’t have as many seeds and they are ‘meatier’ which basically just means they are much easier to dice.
Red onion is next, just pick a medium sized firm one. You’ll also need canned jalapeños, limes and cilantro. So let’s talk about cilantro for a minute.
Honestly, I don’t think I ever tasted cilantro until after I had graduated from high school. (Tasted it at Cafe Rio and had no clue what it was!) At first I really really didn’t like it. I think it is an acquired taste for me, every time I have it I like it a little more. If you are a cilantro lover, you might need to add in a little more than this recipe calls for. ? If you are a cilantro hater, just leave it out. Confession: I usually do.
To put the Pico De Gallo together, finely dice the tomatoes and onion. Mince the jalapeños, roughly chop up the cilantro. Season with salt & pepper and then squeeze the fresh lime over top. Stir to combine.
The best news is, this really just gets better the longer it sits and soaks.

- 8 roma tomatoes diced small
- 1 small red onion diced small
- 1/4 cup minced canned jalapeños
- 1/2 cup fresh cilantro
- 2 limes
- salt and pepper to taste
Instructions
- In a medium bowl mix together the diced tomatoes, onion and minced jalapeños.
- Roughly chop the cilantro and toss together.
- Squeeze the juice from both limes into the bowl and mix well. Season with salt and pepper to taste.
- Add more cilantro or jalapeño to your liking.
- Keeps well in the refrigerator for 3-4 days.
