An innovative twist on a classic, Rice Krispy Treat Cookies are easier to serve, handle, and eat than their bulky square counterpart – all while maintaining the crispy x buttery x marshmallowy flavors we love!

Rice Krispy Treat Cookies
This is one of your favorite no bake treats reinvented in the best possible way! We shape the rice krispy treat into a cookie and top it off with extra dehydrated marshmallows, just for fun. This makes it easier to serve, transport, and of course enjoy! You’re going to love eating this old favorite in a much more convenient way!

Ingredients
*Find instructions and exact quantities in the recipe card at the bottom of the post.
- Rice Krispie Cereal – Name brand or store brand will work fine.
- Mini marshmallows – My personal opinion is that you must use mini marshmallows here, the big ones won’t melt as easily!
- Salted butter – I always, always use salted butter. If you don’t have any on hand, you can use unsalted and add an extra pinch of salt to the dough.
- Vanilla
- Dehydrated mini marshmallows – I found these on the baking aisle of my grocery store, but they may also be by the hot chocolate.
How to Make Rice Krispie Treat Cookies
- In an extra large bowl, toss together the cereal and approximately ¼ of the marshmallows. Set aside.
- In a large microwave safe bowl, microwave the butter until completely melted.
- Add the remaining marshmallows to the butter and stir to coat.
- Microwave for 1 minute, stirring at the 30 seconds mark.
- Add the vanilla to the bowl and stir until well combined and smooth.
- Pour the melted marshmallow mixture into the bowl with the Rice Krispie Cereal. Stir until well combined.
- Wet your hands with water and then gently press and shape the cereal treats into cookie shapes and top with dehydrated mini marshmallows, if desired.

Rice Krispy Cookie Storage
Store these cookies in an airtight container at room temperature. Enjoy within 3 days for maximum softness.

- Silicone baking mat – I love using this or parchment paper to line my cookie sheets to make it easy-peasy to get cookies off of the pan without sticking.
- Spatula – I love using silicone spatulas to mix up the rice krispy treat cookies because it doesn’t stick as badly!

- 1/3 cup (73g) salted butter
- 1 tsp vanilla
- ½ cup (42g) dehydrated mini marshmallows

Instructions
