Rice Krispy Treat Cookies

An innovative twist on a classic, Rice Krispy Treat Cookies are easier to serve, handle, and eat than their bulky square counterpart - all while maintaining the crispy x buttery x marshmallowy flavors we love!

Ingredients

  • 6 cups (168g) Rice Krispie Cereal
  • 16 oz (453g) bag mini marshmallows, divided
  • 1/3 cup (73g) salted butter
  • 1 tsp vanilla
  • ½ cup (42g) dehydrated mini marshmallows

Instructions

  • In an extra large bowl, toss together the cereal and approximately ¼ of the marshmallows. Set aside.
    6 cups (168g) Rice Krispie Cereal, 16 oz (453g) bag mini marshmallows, divided
  • In a large microwave safe bowl, microwave the butter until completely melted.
    1/3 cup (73g) salted butter
  • Add the remaining marshmallows to the butter and stir to coat.

  • Microwave for 1 minute, stirring at the 30 seconds mark.
  • Add the vanilla to the bowl and stir until well combined and smooth.
    1 tsp vanilla
  • Pour the melted marshmallow mixture into the bowl with the Rice Krispie Cereal. Stir until well combined.
  • Wet your hands with water and then gently press and shape the cereal treats into cookie shapes and top with dehydrated mini marshmallows, if desired.
