Chicken Caprese

Caprese is a classic flavor combination of tomato, balsamic, basil and mozzarella cheese. Chicken caprese pasta takes this beloved combination and adds tortellini pasta and chicken to make it into a drool-worthy and complete meal. 

Fresh and hearty, chicken caprese pasta is oh-so-easy to make with a perfectly creamy sauce, cheesy pasta, tender chicken and fresh produce. You’ll be amazed how this dish somehow keeps making it back onto your weekly meal plan the rest of this summer and into fall.

Ingredients in Chicken Caprese Pasta

  • Heavy cream  – You can also use Half & Half, just note that your sauce will not be as thick and you shouldn’t boil so you can avoid curdling. 
  • Chicken broth  – If you’d like to make this vegetarian, sub vegetable broth and omit the chicken! 
  • Garlic powder  – Feel free to use fresh garlic instead. One clove should do the trick! 
  • Salt and pepper, to taste
  • Parmesan cheese
  • Cherry tomatoes, halved
  • Chicken, cooked & diced  – I use rotisserie chicken- just one breast is usually about 2 cups! 
  • Fresh basil, minced
  • Tortellini, prepared – Just follow the instructions on your package for preparation. I typically get my tortellini frozen and boil for 3 minutes while I am putting the sauce together.
  • Mozzerella – Add this in at the end to ensure you have little pieces of cheese mixed throughout the pasta and it doesn’t just melt into the sauce. 
  • Balsamic glaze – This is something that I LOVE and pretty much try to put on as many things as possible like my caprese flatbread.

How to Make Caprese Chicken Pasta

  1. In a large skillet, combine the heavy cream, chicken broth and garlic powder and salt and pepper.
  2. Heat to a medium high heat, and bring to a soft simmer.
  3. Once simmering, slowly add the parmesan cheese, stirring until the sauce has thickened.
  4. Once your sauce is thickened, add in the cherry tomatoes, diced chicken and fresh basil. Continue simmering until everything is heated through.
  5. Next, add the prepared tortellini and stir to coat.
  6. Remove from heat and stir in the diced mozzarella.
  7. Top the dish with balsamic glaze and serve.
  8. If making ahead of time, store in the fridge until ready to serve. Once ready, place in an oven safe dish and then heat through at 350 for about 25 min. When heated you may need to add a splash of milk to get the sauce creamy again.

What side dishes go well with chicken Caprese pasta?

I love to serve this with a crusty sourdough bread and a nice green salad (think Olive Garden style) plus some fruit.

How do I store leftovers of chicken Caprese pasta?

Put any leftovers you may have in an airtight storage container. Store in the fridge for up to 4 days. After reheating, add a splash of milk to make the sauce creamy again.

Ingredients 

  • 1 1/2 cups heavy cream
  • 1/2 cup chicken broth
  • 1 tsp garlic powder
  • salt & pepper, to taste
  • 3/4 cup parmesan cheese
  • 1 cup cherry tomatoes, halved
  • 2 cups cooked chicken, diced
  • 1/4 – 1/2 cup fresh basil, minced
  • 19 oz tortellini, prepared
  • 1 cup diced fresh mozzarella
  • Balsamic glaze

Instructions 

  • In a large skillet, combine the heavy cream, chicken broth and garlic powder and salt and pepper.
  • Over medium high heat, bring to a soft simmer.
