Caprese Chicken Tortellini

- 1 1/2 cups heavy cream
- 1/2 cup chicken broth
- 1 tsp garlic powder
- salt & pepper, to taste
- 3/4 cup parmesan cheese
- 1 cup cherry tomatoes, halved
- 2 cups cooked chicken, diced
- 1/4 - 1/2 cup fresh basil, minced
- 19 oz tortellini, prepared
- 1 cup diced fresh mozzarella
- Balsamic glaze
In a large skillet, combine the heavy cream, chicken broth and garlic powder and salt and pepper.
Over medium high heat, bring to a soft simmer.
Slowly add the parmesan cheese, stirring until the sauce has thickened.
Add in the cherry tomatoes, diced chicken and fresh basil. Continue simmering until everything is heated through.
Add the prepared tortellini and stir to coat.
Lastly, stir in the diced mozzarella.
Top the dish with balsamic glaze and serve.
