Easy Chicken Salad Recipe

I honestly have no hesitation telling you that this 5 ingredient chicken salad sandwich is going to change the way you think about summer meal planning! It takes less than 15 minutes to make, is super flavorful, is filling without being heavy, tastes fresh and is PORTABLE. I know, it really is revolutionary. 

So this summer, instead of frantically picking up fast food after spending your evenings driving soccer carpool and sitting in a folding chair at yet another little league game, you can make this instead. Trust me – your taste buds, budget, and conscience are going to thank you.

Chicken Salad Ingredients

  • Rotisserie chicken – I use rotisserie chicken to make things easier, but you can use leftover shredded chicken if you’d prefer. 
  • Celery
  • Grapes
  • Mayonnaise – You can use plain greek yogurt in place of the mayo, but it will make the sandwiches quite tart. 
  • Montreal chicken seasoning – I am truly obsessed with this seasoning – it makes this dish! I use this on everything all the time and highly recommend picking some up at your grocery store. But you can add your own seasonings instead if you need to.

How to Make This 5 Ingredient Chicken Salad Recipe

  1. Prep all of your ingredients by chopping up the grapes, celery and rotisserie chicken. 
  2. Add all chopped ingredients to a large bowl with the mayo and Montreal chicken seasoning. 
  3. Mix ingredients together. 
  4. Serve in croissant rolls, on bread, with crackers, or in a wrap.

Chicken Salad Sandwich FAQs

Can I prep chicken salad sandwiches in advance?

Yes, you can! If you have the option, I recommend making the filling and storing it in the fridge (up to 3-5 days) until you are ready to use it. Then when you’re ready to eat, fill the croissants (or put it on the bread / crackers / tortilla) to help prevent soggy sandwiches!

Can I prep chicken salad sandwiches in advance?

Store in the fridge for 3-5 days in an airtight container.

How do you keep chicken salad sandwiches from getting soggy?

Using the right amount of mayonnaise will help ensure that the sandwiches don’t get soggy. It will also help if you chill the chicken salad in the fridge prior to putting the chicken salad on the bread.

Why does my chicken salad taste so bland? 

You can definitely change up the seasoning to your liking so it doesn’t taste bland. I always use McCormick’s Montreal Chicken seasoning but you could always add more salt, garlic powder, pepper, onion powder etc.

Does mayonnaise make bread soggy?

If using too much, yes, mayonnaise can make bread soggy, but a thin layer or the mayonnaise used in this chicken salad recipe will not make the bread soggy.

Ingredients 

  • 2 cups shredded rotisserie chicken
  • 1/2 cup chopped celery
  • 1 cup sliced grapes
  • 1/2 cup mayonnaise
  • 1 1/2 tsp montreal chicken seasoning

Instructions

  1. This is a delicious chicken salad. I tend to use grapes also along with walnuts and it is the bomb. The next time I go grocery shopping I will look for that seasoning you mentioned in the article. I, also use olive oil to toast my bread before applying my salad and it adds a special kick to my salad and it makes the sandwich even more delicious!

  2. I love to sprinkle some poppy seeds in my chicken salad. Gives it a little crunch.

  3. Best chicken salad recipe EVER…add a dash of soy sauce to taste to your mayonnaise & use sliced, drained , loosely chopped water chestnuts. Plus grapes. Sooooo good
