Fiesta Chicken Recipe

Easy fiesta chicken is a yummy and zesty take on our favorite mexican flavors. When it comes to mexican dips, salsa is good, guacamole is better, but chicken fiesta is flavorful dip heaven. 

While I typically serve this fiesta chicken recipe as a dip, you can take it one step further and make it a bonafide dinner. Serve it over rice or in a quesadilla to unlock a meal that is hearty, versatile, and super simple to make. Your Tuesday nights will thank me!

Ingredients in Easy Fiesta Chicken

  • Rotel tomatoes – Control the heat of the dish with the rotel tomatoes. I always use mild because, well, I’m whimpy. But you can also use salsa. Do not drain the liquid from the Rotel before adding it. 
  • Black beans – Feel free to add in as many mix-ins as you’d like. Black beans, pinto beans, canned corn, green chilis, etc.
  • Cream cheese – Use the block cream cheese! You can use low fat, but fat free or the spreadable kind in the tub will not work here. 
  • Ranch seasoning packet – The ranch seasoning really flavors the entire dish. If you don’t want to use packaged seasoning, there are plenty of ranch seasoning recipes online you can try instead. But I like the packets because they’re so easy haha. 
  • Shredded chicken – I use rotisserie chicken and have tossed it in frozen in one giant chunk before and it works great!

How to Make This Chicken Fiesta Recipe

  1. Add all of the ingredients into a large skillet over low heat. If you’d rather, you can also add all ingredients to a slow cooker and heat on low – following subsequent steps. 
  2. Cover and allow all of the ingredients to warm up for about 10- 15 minutes.
  3. Once everything is warmed through, stir to combine.
  4. Serve as a chip dip, over rice, or in a quesadilla.

Can I add additional vegetables like bell peppers or corn to the dish?

Yes, you can add whatever you’d like to this dish! I’ve seen people add different types of beans, peppers, onions, or corn to fiesta chicken.

What are some serving suggestions or ways to enjoy Fiesta Chicken?

You can serve as a dip with chips, served over rice, inside a quesadilla or as a filling for enchiladas.

  • 2 cups shredded chicken
