While I typically serve this fiesta chicken recipe as a dip, you can take it one step further and make it a bonafide dinner. Serve it over rice or in a quesadilla to unlock a meal that is hearty, versatile, and super simple to make. Your Tuesday nights will thank me!
Ingredients in Easy Fiesta Chicken
- Rotel tomatoes – Control the heat of the dish with the rotel tomatoes. I always use mild because, well, I’m whimpy. But you can also use salsa. Do not drain the liquid from the Rotel before adding it.
- Black beans – Feel free to add in as many mix-ins as you’d like. Black beans, pinto beans, canned corn, green chilis, etc.
- Cream cheese – Use the block cream cheese! You can use low fat, but fat free or the spreadable kind in the tub will not work here.
- Ranch seasoning packet – The ranch seasoning really flavors the entire dish. If you don’t want to use packaged seasoning, there are plenty of ranch seasoning recipes online you can try instead. But I like the packets because they’re so easy haha.
- Shredded chicken – I use rotisserie chicken and have tossed it in frozen in one giant chunk before and it works great!

- Add all of the ingredients into a large skillet over low heat. If you’d rather, you can also add all ingredients to a slow cooker and heat on low – following subsequent steps.
- Cover and allow all of the ingredients to warm up for about 10- 15 minutes.
- Once everything is warmed through, stir to combine.
- Serve as a chip dip, over rice, or in a quesadilla.
