Brownie Mix Cookies- The ultimate Boxed Mix Hack!
Sometimes (okay most of the time!) there are just not enough minutes in the day to accomplish everything. I am fairly certain I am not alone in this.
There are also sometimes that you just need some chocolate.. am I right? I know that I am definitely like that.. almost every day. Again, I’m fairly certain I am not alone!!
Let’s be honest, chocolate can fix the fact that your child just spilled their glass of milk for the 6th time that day or the fact that you are folding the 47th load of laundry for the day.
These Brownie Mix Cookies are the perfect Monday Blue’s cure. They come together in literally minutes, so you can have some chocolate goodness in your belly in no time!
Plus, there are so many ways you can mix these up. I like to toss some peanut butter chips into mine sometimes.
How to Make Brownie Mix Cookies
To make the brownie mix cookies, you’ll take one box of brownie mix, 1 stick (1/2 cup) of melted butter, 1 egg and 1/2 cup of flour. Mix all of that together.
That is it.
No, I’m not even kidding!
Stir in any mix in’s you’d like. I like to add extra chocolate chips, peanut butter chips or m&m’s.
Scoop and arrange on a cookie sheet.
Bake at 350° for 8 minutes or until the cookies are no longer glossy on top.
Wait 5 minutes before transferring to a wire cooling rack.
Best eaten within 24 hours. Although I totally admit to still eating them after a day or two, they just won’t be as chewy and soft.
PS. I think these would make AMAZING ice cream sandwiches.

Was peanut butter in addition or in replacement of the stick of butter?
What do you mean by scoop, like an ice cream scoop. The scoops I saw online looked pretty big. How long to cook
I have a cookie scoop, size # 50, that I use when making cookies. I purchased it on amazon. You can just portion out your cookie dough with spoons if you’d like. Aim for about 1 1/2 tbsp of dough per cookie. You can find the cook time in the recipe card along with all of the ingredients and instructions. 🙂 Enjoy!
Thank you for the question. Sometimes I put in some peanut butter chips into the cookies in addition to all the other ingredients. Happy baking!
These are delicious!! Made these for my friend’s birthday today! I added some sprinkles on top!!
Yum!! I am so glad you enjoyed them!
Thank you Thank you Thank you! Finally a brownie cookie that’s awesome and delicious and easy to make!
I’ve used this recipe so many times to make cake mix cookies or brownie cookies. Over a year ago I went vegan. Now I use vegan butter and I use ground flax seeds mixed with water to replace the egg. I’ll add vegan chocolate chips or nuts dried fruit or other things to stir in. Today I made vegan red velvet cookies with a red velvet cake mix and King David vegan white chocolate chips.
I just finished making a batch of these yummy, delicious brownie cookies… This is the very best recipe I have found for this particular type of cookie… We will definitely be putting this on a regular rotation in our home! Thank you so much for sharing this recipe!
Did you refrigerate the batter before scooping it?
