You’re going to love these caramel Cadbury Egg cookie bars!

I’m going to be upfront with you – you’re going to want to stock up on cadbury eggs so you can make this recipe year round. This recipe takes my viral caramel cookie bars and adds in everyone’s seasonal favorite, cadbury eggs. And let me tell you, the combination is divine. 

I use crushed mini cadbury eggs in this recipe, but you want to be careful not to crush them too much. Here’s how you walk that line: place your eggs in a ziptop bag and seal it. Then take a rolling pin and lightly roll over the eggs until they begin to crack!

What you’ll need to make Cadbury Egg cookie bars with caramel

  • Salted butter, softened – I *always* use salted butter. But if you would prefer, you can use unsalted and add extra salt to the dough as needed. 
  • Brown sugar 
  • Granulated sugar
  • Egg
  • Vanilla extract  – This is going to really bring out the flavor of all of the elements of these cookie bars. 
  • All-purpose flour
  • Baking soda
  • Salt 
  • Cadbury mini eggs
  • Werther’s Soft Caramels – This will be 2 small packages! 
  • Sweetened condensed milk – We will add this to the caramels to soften them up and make it the perfect texture for our bars.

Steps for making caramel cookie bars with Cadbury Eggs

  1. Heat your oven to 350°F (180°C) to start.
  2. Get a 9×9 inch pan ready by either lining it with parchment paper or coating it with a non-stick spray.
  3. Crush your Cadbury Mini Eggs and put them into a bowl for later use.
  4. Using a stand mixer, blend the butter and sugars together until they achieve a smooth, light, and fluffy consistency, which should take a couple of minutes.
  5. After scraping down the sides of the bowl, incorporate the egg and vanilla into the mixture.
  6. Once that’s thoroughly mixed, halt the mixer to add the flour, baking soda, and salt. Begin to mix at a low speed. 
  7. When the flour blend is partially mixed in, add the crushed Cadbury Mini Eggs to the bowl and continue to mix until everything is evenly combined.
  8. Set the dough to the side while we make the caramel.
  9. In a large microwave safe bowl, melt the caramels with the sweetened condensed milk for 30 seconds at a time, stirring and then continuing to microwave until the caramel can be stirred smooth. Set aside.
  10. Split the dough in two, pressing one half of the dough into the bottom of your prepped pan.
  11. Over this layer of dough, evenly pour and spread the caramel mixture.
  12. With the remaining dough, arrange portions over the caramel layer until all of the dough has been used.
  13. Bake in the preheated oven for 25-35 minutes, or until the top turns golden brown and the middle is set.
  14. Allow the cookie bars to cool completely before slicing.
  15. Slice the bars to your preferred size and enjoy! If you’d like, you can add a pinch of flake salt to the top. 
  16. Keep the bars in a sealed container for up to three days to maintain freshness.

How should I store my cookie bars?

Store any leftover bars in an airtight container for up to 3 days on the counter.

Can I freeze Cadbury Egg cookie bars?

Absolutely! I recommend cutting your bars into squares and then placing them onto a cookie sheet, leaving a little room in between each bar, and freeze for about 1 hour. Once they are solid to the touch, place them in a freezer bag for storage for up to 3 months!

Ingredients 

  • 1 cup (222g) salted butter, softened
  • 1 cup (246g) brown sugar
  • 1 cup (230g) granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2 1/4 cups (342g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups crushed cadbury mini eggs
  • 40 Werther's sof caramels (2 small packages)
  • 1/2 cup (55mL) sweetened condensed milk
