Lucky Charms Cereal Bars Recipe

I think these homemade cereal bars just fulfilled a childhood dream I didn’t quite realize I had. Marshmallow-infused cereal in a sweet, chewy bar treat? Sign me up! 

This quick treat/snack is the easiest way to be considered a cool adult to the little people in your life. It is a super fun and a way yum snack that is equal parts cute and lucky (probably). Make this for your Leprechaun traps, use them as a lunch box surprise or a fun little afternoon treat. Your taste buds are going to feel like they struck gold.

Ingredients In Lucky Charms Bars

  • Lucky charms – Yes, the off-brand will work too! 
  • Rice Chex cereal 
  • Butter – I always use salted butter. You can use unsalted if that’s what you have on hand. Just add a pinch of salt to your bubbling mixture.
  • Granulated sugar
  • Corn syrup

How to Make Lucky Charms Cereal Bars

  1. Prepare a 1/4 sheet pan (or half of a half sheet) with either a silicone baking mat or parchment paper. Set aside.
  2. In a large bowl, combine the Lucky Charms cereal and Rice Chex cereal. Set aside.
  3. In a medium saucepan, combine the butter, granulated sugar, and corn syrup. Bring to a boil and boil for 2 minutes.
  4. Pour the mixture into the bowl with the cereal. Stir to coat.
  5. Transfer and press into the prepared pan.
  6. Allow the bars to set up before cutting. You can refrigerate the bars if you’d like them to set faster.
  7. Cut and serve. Enjoy!

How should I store?

I recommend cutting into bars and storing in an air tight container up to 3 days. The longer they sit, the more dried out they will be but that doesn’t make them bad by any means, just not as soft as they are on day 1.

Can I make these cereal bars with other cereals?

I haven’t tried making these with anything but Lucky Charms, but I think they would taste yummy with other cereals. If you try out another cereal (maybe Captain Crunch??) you’ll have to let me know how they turn out!

Ingredients

  • 4 cups Lucky Charms Cereal
  • 2 cups Rice Chex Cereal
  • 6 tbsp butter
  • 1/2 cup granulated sugar
  • 1/2 cup corn syrup

Instructions 

  • Prepare a 1/4 sheet pan (or use half of a half sheet pan) with either a silicone baking mat or parchment paper. Set aside.
  • In a large bowl, combine the Lucky Charms cereal and Rice Chex cereal. Set aside.
