Instant Pot Breakfast Burritos are an easy way to make breakfast burritos for a crowd! Simple ingredients like frozen O’Brien Hash browns, Diced Ham, and Eggs are thrown in the Instant Pot to cook without babysitting!

Instant Pot Breakfast Burritos- Why the Instant Pot?
I know what some of you are thinking.. I could make breakfast burritos on the stovetop, why should I use my Instant Pot? Especially if the time involved might be a little longer using the Instant Pot.
Well, I wouldn’t be writing this post if I didn’t think it was 100% totally worth it.
First off, making enough filling for 10 breakfast burritos would take a lot of time on the stovetop. I mean, who has a pan that big? I know I don’t.
Second, and pretty much one of the main reasons I LOOOOOVE my Instant Pot, is that there is no baby-sitting required. Who else can say they made a delicious, nutritious breakfast for the family as they got the whole clan dressed and ready for the day, made beds, unloaded the dishwasher and actually set the table, for once?
I know I can. ?
Pot in Pot Cooking Method
If you are new to the Instant Pot world, Pot in Pot (or PIP) cooking is something that is fairly common.
Just a readers digest version, the Instant Pot needs liquid to come to pressure. If you have a dish that you don’t want soupy, you’ll need to cook the dish in a separate pot sitting on the trivet inside of the Instant Pot. Hence, Pot in Pot. BUT I have something amazing to tell you. The other day I was hit with a ‘brilliant, beyond brilliant, idea’ #namethatmovie.
I used my 3qt liner inside of my 6qt Instant Pot for my inner pot for the PIP method. I know, mind blown, right?
Best news is, the 3qt non stick liner is only $14.95 on amazon!! I can fit so much food into that liner for PIP method cooking now! Before I was restricted to my little 6 inch cake pan. How to make Instant Pot Breakfast Burritos
*This recipe must be made using the PIP method.*
To make the breakfast burritos the main ingredients I use are frozen O’Brien Hash browns, Diced Ham (or fried up sausage), and eggs.
I sprayed my 3qt liner with non-stick spray first, because I just have the stainless steel insert. If you have the non-stick, you could definitely skip that step if you want!
If you haven’t ever heard of O’Brien Hash browns, they are basically cubed hash browns with peppers and onions. I find them in the freezer section of my grocery store near the French fries and other frozen potato products.

I pour the frozen hash browns into the 3qt liner first. I then top the hash browns with the protein of choice.
I have used diced ham and ground sausage. Both were cold out of the fridge when put into the pot and both worked really well!! I haven’t tried bacon, but that is just because I need my bacon CRISP. No floppy bacon for this girl. If I do have a hankering for bacon, I would probably add it in afterwards so it would stay crispy.

The next step is to prepare the egg mixture. I whisk together eggs, milk, sour cream, shredded cheese, salt and pepper.
After that is whisked thoroughly, I pour it over the hash browns and protein. The eggs will soak down to the bottom of the pot and coat everything. No stirring needed.

Now, cover the the pot with foil.
Pour 1 cup of water into the LARGER liner and place the trivet inside. Set the small liner into the large liner, like pictured below.

To cook the burrito filling, I cook, stir, then cook once more. The desired finished product is more of a scrambled egg rather than a quiche of some sort. This method of cooking twice with a good stir in the middle gives us the scrambled egg type filling.
I locked the lid and cooked on Manual HIGH for 25 minutes QR.
At that point, the eggs won’t be all the way cooked through. Give it a good stir, then replace the foil.
Cook one more time on Manual HIGH for 10 minutes QR. At this point the eggs should be completely done and ready to be spooned and wrapped up in tortillas to make the breakfast burritos complete!
PS- These breakfast burritos freeze GREAT! To warm them up, I take a paper towel and wet it just a little so it is damp. Then I wrap the burrito in the damp towel and microwave for 1:30-2:00 minutes. The damp towels helps make it so the tortilla doesn’t dry out.

- Place the small ‘inner pot’ inside of the large pot, onto the trivet.
- Cook on Manual HIGH for 25 minutes. QR.
- Carefully take foil off, stir and then replace the foil.
- Cook a second time on Manual HIGH for 10 minutes. QR
- The filling is now ready to be stuffed into tortillas to make delicious breakfast burritos!

Hello! Did you put the 3qt liner in a 6qt, or 8 qt instant pot?
Hi Kati! I put it in my 6 qt, but either will work.
From all the pastas, chickens, ribs, steel cut oats, yogurts, and pork, this is the best meal I have EVER MADE. Y’all I’m not kidding…BEST MEAL E V E R!!!!! I know you’re probably thinking you could do this on the stove top, but it’s not the same. Something about the steam, the pot in pot method, I can’t put my finger on it, but it will be my go to breakfast for a long time. I used about 1/3 cup per low carb fajita size tortilla, which yielded 10 burritos.

Can I add cheese on at the end instead? Does it change the flavor much? I like to see the melty cheese in my burritos ? I’m excited to do this to freeze as I have my 3rd child on the way and I haven’t started any freezer meals! I feel like this will make a cranky mama happy! Thank you!
Hi Allison- we love cheese so to be honest, I usually put more cheese in the tortilla when putting the burritos together! #noshame ? You could definitely skip the cheese and just add it into the tortilla though! Hope this helps!
can i cook the sausage in the instapot
Hi Pam- you could brown the sausage in the Instant Pot beforehand. Just make sure to deglaze the pot before cooking the burritos! Another option would be to pressure cook the sausage and then crumble it after it pressure cooks. Hope this helps a bit!
could you put all the ingredients together the night before and put it in the frigerator and then cook it first thing in the morning? Please let me know your thoughts or any suggestions
Hi Sandra- I think that would work out just fine. It might just take a little bit longer for the pot to come to pressure in the beginning. Everything else will stay the same though!

ok, i’ve made this twice. They are amazingly good and easy. However, one problem: I purchased the 3 qt IP non stick liner…..and both times it sticks like crazy. The first time I used a paper towel and greased the pot with coconut oil. The second time I used spray on olive oil. Both times I had to soak and scrape and soak and scrape to get the pot clean. I thought the point of purchasing the non stick was so this wouldn’t happen? This won’t stop me from making again and again but wondering if I’m doing something wrong?
Hey Mikki- I actually only have the stainless steel 3 qt inner pot. It has never burned or stuck for me! Maybe the dark lining of non-stick makes it get a little hotter near the pan? I’m not sure. That is super frustrating though! Maybe someone else will see this and be able to help you better. Glad you like the recipe, though!
THIS WAS A LIFE SAVER, AND VERY TASTY!!! I did PIP method and used sausage, it came out fantastic!! But I do have one question, Are you suppose to stir the hash browns and protein after the 25 cook along with the eggs?? I did read that you don’t add more water for the second cook, which was my other question but I ran into the BURN sign, WHAT DO I DO??
Hi Candise! You shouldn’t run out of water, but you could definitely add more in the pot! Wouldn’t hurt anything! I haven’t ever gotten a burn sign, sorry that happened! I always dump all the ingredients in right from the get go! So the hash browns are in there for the initial 25 min cook time. ?
found you via Facebook group, your recipe received high reviews & lots of interest. This looks so yummy. I like your suggestions on the meat (less expensive the links or patties). I’ll be making this for my crew of 7. This is going to be less expensive than prepared store bought freezer bowls.
I’d like to suggest, more recipes please that use the PIP method, using the Instant Pot 3 qt liner for the inner pot of the 6 qt Instant Pot. I’m having a difficult time finding that kind of info. on the internet that specifically uses the IP inner pots that way. I need to make a list of recipes that I’ll be using my 3 qt liner (just ordered) in my 6 qt. I’ve got to be ready when hubby asks why I bought that little pot.

Finally purchased ham to dice so, we could try this recipe. I will be making this again. My 10 yr old said it tastes like stuff (samples) at the store, which I took as a compliment. My other son said ‘delicious’
I used raw potato & should have used my finest shredder blade. Or 1st made baked potatoes, let cool then shred. After cooking I let the food set longer in the pot, lid on but heat off…and that helped the potatoes get completely soft and no longer slightly crunchy.
I look forward to more PIP, pot in pot recipes using the 3 quart inside the 6 quart.

I purchased the non-stick mini 3-quart liner and it is too tall to be able to secure the lid of my 6-quart Instant Pot. Do you have any idea if they make different heights of 3 quarts?
Hi Danielle- there should just be one height for the 3 quart liners. ? 2 thoughts- are you sure you have a 6 qt & not a 5 qt? Walmart was selling a 5 qt a while back which isn’t as deep as the 6 qt. My other thought is that the trivet isn’t inserted correctly which is making everything taller. Does that help at all?
Hi Danielle, I commented this already but I replied to a different comment. Perhaps you have already resolved your inner liner pot issue with height.
Check your trivet, I have 2, one is higher than the other (gray silicone with long handles by Instant Pot) I can use it, I just have to move the handles (tuck them under edge of inner 3 qt stainless steel pot) so lid fits on my 6 qt.
