Easy-to-prepare Crepes; Beginner Friendly!

Is it just me, or do crepes seem super fancy? Fancy food is usually associated with hard, tedious, and time consuming.

Well fancy food just got a whole new definition. These crepes, honestly, couldn’t be easier! Kid’s love them, too!

The crepes work well with both sweet and savory fillings. Strawberries, raspberries, blueberries, chocolate chips, powdered sugar.. you bet!! On the flip side eggs, bacon, breakfast potatoes, country gravy are all to die for too!

I really don’t know which I would choose, savory or sweet. I usually have a couple savory ones and then a sweet crepe for dessert.

Crepes made from pancake mix

How To Make Pancake Mix Crepes

Crepes are made from an extremely thin batter. The batter consists of pancake mix (I used Krusteaz), milk, an egg, and vanilla. Whisk until there are no lumps left.

pancake mix, milk, egg and vanilla mixed together into a batter

Heat a small non-stick frying pan over medium high heat until hot. The size of your pan will be the size of your finished crepes, so keep that in mind!

Once the frying pan is HOT spray with non stick cooking spray. The next two steps need to be done as fast as possible.

Pour a small amount of batter (I used 1/8 of a cup of batter for my small frying pan) in the middle of the hot pan. Then pick up the pan and tip and twirl it until the entire bottom is coated.

Set back onto the stove top and let it cook until the edges start to peel away from pan. At that point, carefully transfer the crepe to a plate and then repeat!!

Tips for the Perfect Crepes

The first crepe is always a dud. I don’t know why, but the first one never comes out quite right. Don’t give up!

Make sure to spray the pan with non-stick spray in between each and every crepe!

Keep the crepes warm in the oven until ready to serve.

Made this for brunch without the sugar. Filled with eggs and ham with some salsa and sour cream. It was wonderful! So easy to make and can fill with anything!

These came out perfectly! I am gluten free and used King Arthur GF pancake mix. Still followed these directions measure for measure and the crepes came out beautifully light golden and cooked perfectly… even the first one! Thank you for this recipe! We put peanut butter, bananas, and Nutella in ours 😉

So glad you were able to make this work Kristen. I know it can be difficult to find gluten free products that work with recipes, good job!

Thank you for this recipe! I came upon your website during safer at home orders and this has been a true joy.

I took me a few tries, and I had to change pans but it was so worth it!

    Thanks!

Can I sub regular milk with almond or oat milk?

I made this with almond milk and it tasted amazing! I usually hesitate to use almond milk bc the flavor is too strong sometimes, but it worked out fine for these crepes.

My daughter loved these! Even the first one came out perfect. Any tips for freezing or refrigeratorating the leftover batter? Or just toss it?

You could refrigerate the leftover batter for a few days, if needed, but I’d just half the recipe next time you make them if you ended up with a lot of leftovers!!

Hello there, so this recipe was great! It was my first time making them, s d I would say it was a success! I’ve always wanted to make crepes and this recipe is saved forever! I needed something that I could use with pancake mix and it was super easy. I ended up spreading cream cheese and making my own blueberry and raspberry compete to fill in the inside and rolled them up! So delicious! The recipe made exactly 7 crepes. One being the first throw away one. Thanks so much for sharing!!

Forgive my ignorance but I’m not really a cook, I just love crepes, I don’t see anywhere that you flip the crepe to cook the other side, am I missing something, the flipping scares me

You don’t need to flip! They are so thin that once the bottom is done cooking, the top has cooked also.

Can I just first say, that I had so much fun making these! They were so simple, and I know you said the first one’s going to come out like a dud. Actually, it came out perfect! I will be making this over and over again, I did not realize how simple they were to make. I’ll be following you for more recipes 😋. I am now known at home, as the crepe Queen, lol.

I absolutely loved this. Your directions were easy to follow, and not to mention comical (in reference to the first one being a “dud”).
    Thank you!
