What is Marry Me Chicken?

Getting dinner on the table every single day is one of the biggest headaches of being human that I can think of. Luckily, I’ve devoted a significant portion of my career to giving you recipes that are quick, easy, and delicious like this Marry Me Chicken – all so you don’t have to worry about the age-old question “what’s for dinner?” Part of my fast & simple rotisserie chicken meal series, Marry Me Chicken tastes exquisite but requires minimal effort.

It combines tender chicken (I use rotisserie because it is SO EASY), sun-dried tomatoes, and a blend of irresistible spices in a creamy, dreamy sauce. Serve it over rice or pasta and you have a meal that is going to have people begging for your hand in marriage (or at least asking you to make this again *sooooonnn.*)

Marry Me Chicken Pasta Ingredients

  • Butter
  • Minced garlic, dried – You can substitute 4 fresh cloves, if desired. 
  • Sun-dried tomatoes
  • Chicken broth
  • Heavy cream – Feel free to use evaporated milk, if needed. 
  • Chili flakes
  • Thyme
  • Oregano – You can add in additional spices if you’d like, but this blend is SO yummy! 
  • Shredded rotisserie chicken – You can also use any other cooked rotisserie chicken you’d like. 
  • Parmesan cheese, shredded
  • Minced basil
  • Salt and pepper, to taste
  • Rice or Pasta – Serve over rice or pasta as desired!

How to Make Marry Me Chicken Pasta

  1. In a large skillet over medium heat, melt the butter completely.
  2. Add the minced garlic and sun dried tomatoes. Simmer for about 1 minute, or until fragrant.
  3. Add the chicken broth, heavy cream, chili flakes, thyme, and oregano to the pan.
  4. Bring to a soft simmer.
  5. Once simmering, add the shredded rotisserie chicken to the pan and stir. 
  6. Slowly sprinkle and stir the shredded parmesan cheese into the pan, stirring until melted and thickened.
  7. Finally, stir in the fresh minced basil and season with salt and pepper to taste.
  8. Serve over pasta or rice and enjoy!

What to Serve with Marry Me Chicken Pasta

This dish pairs so well with a multitude of side dishes. A few of my favorites to serve with Marry me Chicken are oven-roasted broccoli, a big green salad, green beans and garlic bread.

How to Store this easy Marry Me Chicken Recipe

Store any leftover marry me chicken in an airtight storage container in the fridge for up to 3 days. Make sure to store separately from your pasta or rice so it doesn’t get absorbed and make your leftovers dry.

Is marry me chicken spicy?

I am probably the biggest wimp you will ever meet when it comes to spice! This recipe is pretty moderate, but you can definitely amp up the spice level with additional chili flakes as desired!

Easy Marry Me Chicken Recipe

Ingredients 

  • 1 tbsp butter
  • 1 tsp minced garlic, *you can substitue 4 fresh cloves, if desired
  • 1/4 cup sun-dried tomatoes
  • 1 cup chicken broth
  • 1 1/2 cup heavy cream , *you can substitue evaporated milk, if desired.
  • 1/4 tsp chili flakes
  • 1/8 tsp thyme
  • 1/2 oregano
  • 2 cups shredded rotisserie chicken
  • 1 cup parmesan cheese shredded
  • 1 tbsp minced basil
  • salt & pepper, to taste

Instructions 

  • In a large skillet over medium heat, melt the butter completely.
  • Add the minced garlic and sun dried tomatoes. Simmer for about 1 minute, or until fragrant.
  • Add the chicken broth, heavy cream, chili flakes, thyme, and oregano to the pan.
  • Bring to a soft simmer.
  • Add the shredded rotisserie chicken to the pan.
  • Slowly sprinkle and stir the shredded parmesan cheese into the pan, stirring until melted and thickened.
  • Stir in the fresh minced basil. season with salt and pepper to taste.
  • Serve over pasta or rice.
