Getting dinner on the table every single day is one of the biggest headaches of being human that I can think of. Luckily, I’ve devoted a significant portion of my career to giving you recipes that are quick, easy, and delicious like this Marry Me Chicken – all so you don’t have to worry about the age-old question “what’s for dinner?” Part of my fast & simple rotisserie chicken meal series, Marry Me Chicken tastes exquisite but requires minimal effort.

It combines tender chicken (I use rotisserie because it is SO EASY), sun-dried tomatoes, and a blend of irresistible spices in a creamy, dreamy sauce. Serve it over rice or pasta and you have a meal that is going to have people begging for your hand in marriage (or at least asking you to make this again *sooooonnn.*)

This recipe is SO easy to customize to the taste buds of your family. Add in more basil, extra sundried tomatoes or additional cheese to make this your own. I’m probably the biggest wimp you will ever meet when it comes to spice, so feel free to amp up the spice level with additional chili flakes as desired.

This dish pairs so well with a multitude of side dishes. A few of my favorites to serve with Marry me Chicken are oven-roasted broccoli, a big green salad, green beans and garlic bread.
How to store leftover Marry Me Chicken Pasta
Store any leftover marry me chicken in an airtight storage container in the fridge for up to 3 days. Make sure to store separately from your pasta or rice so it doesn’t get absorbed and make your leftovers dry.

Ooooooo I can’t wait to try this!😆😮💨🤤
This was so easy to put together. A quick and easy meal. I had left over roasted chicken and was at a loss of what I wanted to do with it. I came across this recipe and had all the ingredients on hand. I served it over Jasmine rice. I will definitely do this dish again. The husband loved it!
SOOO Yummy!! I made a double batch and every drop got eaten. I used cherry tomatoes that I had dried last year and they were super delicious in it ( I didnt have any bottled sun-dried tomatoes) – WIN WIN!
Easy and delicious
This recipe costs for 1/2 oregano. But what does that equal exactly?
Sorry, that should be tsp! I will fix that!
