Easy-to-prepare Crepes; Beginner Friendly!

Is it just me, or do crepes seem super fancy? Fancy food is usually associated with hard, tedious, and time consuming.

Well fancy food just got a whole new definition. These crepes, honestly, couldn’t be easier! Kid’s love them, too!

The crepes work well with both sweet and savory fillings. Strawberries, raspberries, blueberries, chocolate chips, powdered sugar.. you bet!! On the flip side eggs, bacon, breakfast potatoes, country gravy are all to die for too!

I really don’t know which I would choose, savory or sweet. I usually have a couple savory ones and then a sweet crepe for dessert.

How To Make Pancake Mix Crepes

Crepes are made from an extremely thin batter. The batter consists of pancake mix (I used Krusteaz), milk, an egg, and vanilla. Whisk until there are no lumps left.

Heat a small non-stick frying pan over medium high heat until hot. The size of your pan will be the size of your finished crepes, so keep that in mind!

Once the frying pan is HOT spray with non stick cooking spray. The next two steps need to be done as fast as possible.

Pour a small amount of batter (I used 1/8 of a cup of batter for my small frying pan) in the middle of the hot pan. Then pick up the pan and tip and twirl it until the entire bottom is coated.

Set back onto the stove top and let it cook until the edges start to peel away from pan. At that point, carefully transfer the crepe to a plate and then repeat!!

Tips for the Perfect Crepes

The first crepe is always a dud. I don’t know why, but the first one never comes out quite right. Don’t give up!

Make sure to spray the pan with non-stick spray in between each and every crepe!

Keep the crepes warm in the oven until ready to serve.

Ingredients

  • 1 cup pancake mix
  • 1 1/2 cups milk
  • 1 egg
  • 1 tsp vanilla

Instructions

  1. Mix all ingredients in a small bowl with a whisk. Whisk until there are no more lumps.
  2. Place a small non-stick frying pan on the stove top. Heat the pan over medium-high heat until the pan is HOT.
  3. Spray the pan with non-stick spray and then immediately pour a small amount (I used 1/8 cup batter for my small frying pan) of batter into the center of the pan.
  4. Quickly pick the pan up and tilt and twirl it until the batter covers the bottom of the pan.
  5. Return to the stovetop and cook until the edges start to peel away from the pan.
  6. Carefully remove the crepe and repeat with the remaining batter.

    I am a huge crepe fan but cannot eat dairy or eggs. I know I can substitute the milk for a non-dairy milk but any suggestions as for a substitute for the egg?

    I made crepes for the 1st time today and my wife loved them! The wife highly recommends the 1st mixture I made. I used last nights spicy grilled chicken, chopped up with fresh spinach, a little red onion, Italian 5 cheese mixture and a teaspoon of raspberry jam! Delicious!

    Thank you for this! I don’t cook much so I don’t keep baking ingredients around but have been wanting to make crepes for months! This worked great even with the protein pancake mix I had in my pantry. I didn’t have vanilla but my coconut almond milk that I used instead of milk had vanilla and wow these turned out great!!!

  7. Made these this morning and they are amazing! I brushed them with syrup and put chopped mango inside! Love these! I used Aunt Jemima’s pancake mix for these golden thin crepes. Definitley a family favorite!

    I definitely messed up the first one. This was my first time making crepes and this recipe was incredibly easy. I think it is important that you put your ingredients in the bowl, in order. I had a 4 year old helping me and the egg got put in before the milk so it was a bit lumpy. Still, it turned out amazing. I also burnt the 6th one but that is because my 1 and 4 year old couldn’t wait to eat it and mine got a little forgotten on the stove hahah
