Peanut Butter Chocolate Sandwich Cookies are rich chocolate buttercream sandwiched between two chewy peanut butter oatmeal cookies. These are just like a good old fashioned peanut butter bar, just in sandwich form!
Peanut Butter Bars Sandwich Style
There is something so complimentary about peanut butter and chocolate. They are just meant to go together, ya know? Like, if foods got married, peanut butter and chocolate would be soulmates.
If you’ve been following my website, you know that I just have a thing for peanut butter and chocolate. I have way too many recipes combining the two ingredients.. but fair warning, I don’t plan on stopping anytime soon. 🙂
Peanut Butter Bars have always been one of my favorites though. I remember bringing quarters to elementary school so I could buy a peanut butter bar at lunch.
I’ve passed the peanut butter chocolate loving gene to my children 😉 but man, that frosting gets EVERYWHERE.
So, why not sandwich cookie this? Same great taste, just a new tidy way to eat them! Perfect for little hands.
Peanut Butter Oatmeal Cookie
This Peanut Butter Oatmeal Cookie is so chewy, sweet and has just the right amount of peanut flavor.
This recipe is an oatmeal cookie recipe that I have added peanut butter to. The peanut butter flavor is there, but definitely not overbearing. I always use crunchy peanut butter, it really gives the cookie another dimension and shot of the peanut flavor.
I have a trick to make these cookies super, ULTRA chewy and soft.
Scoop or roll the dough into balls and bake them. They will keep shape as they bake, so when they come out of the oven, they will look basically how they looked when you put them in.
Here is the trick: right after you take them out of the oven, use the back of a glass cup and press the cookies down flat.
You’ll see how the center is still a little doughy, that is totally fine! Just leave them on the pan, and the centers will continue to cook a bit on the hot pan.
By pushing all of the air out of the cookie, the result will be dense and chewy.. and delicious.
Chocolate Buttercream Filling
The Chocolate Buttercream Filling really is what makes these cookies so outstanding. It is creamy, rich and full of chocolate flavor.
A lot of chocolate buttercream recipes call for a little bit of espresso powder, but I don’t drink coffee.. so a few years ago I decided to throw in some chocolate pudding powder instead. The was so SO pleased with the results.
The chocolate buttercream tastes amazing and comes together in minutes. You really can’t beat that!
Peanut Butter Chocolate Sandwich Cookies

Peanut Butter Chocolate Sandwich Cookies are rich chocolate buttercream sandwiched between two chewy peanut butter oatmeal cookies. These are just like a good old fashioned peanut butter bar, just in sandwich form!
Ingredients
Peanut Butter Oatmeal Cookie
- 1/2 cup butter room temperature
- 1/4 cup crunchy peanut butter
- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 eggs
- 1 tsp vanilla
- 1 3/4 cup flour
- 3/4 tsp salt
- 1 cup rolled oats
Chocolate Buttercream
- 1/4 cup butter
- 2 1/2 tbsp cocoa powder
- 1 1/2 cups powdered sugar
- 2 tbsp chocolate pudding powder
- 1 1/2 tbsp milk
- 1 tsp vanilla
Instructions
Peanut Butter Oatmeal Cookies
- Preheat oven to 350°.
- Cream together butter, peanut butter and sugars. Cream for 3 minutes, the mixture will be light and fluffy.
- Scrape the sides of the bowl and add in the eggs and vanilla. Mix until combined.
- Add the flour, salt and rolled oats to the bowl and mix thoroughly.
- Scoop the cookie dough out onto a parchment paper lined cookie sheet.
- Bake for 8-10 minutes, or until the edges barely start turning brown. The cookies probably won’t change shape much while cooking, that is okay.
- Right after the cookies are pulled out of the oven, take the back of a glass drinking cup and smash the cookies flat. Let them cool on the hot pan.
Chocolate Buttercream
- Place all ingredients into the bowl of a stand mixer.
- Using the paddle attachment, starting slowly, combine the ingredients.
- Once the ingredients are mostly combined, turn the speed up as high as possible and let the buttercream whip for a few minutes until light and fluffy.
Assembly
- Each sandwich will use two cookies.
- Frost the backside of one cookie with a generous amount of frosting.
- Top the frosting with another cookie. The backsides of the cookies should be touching the frosting, so the pretty side of the cookie is facing out.
