Lemon Parmesan Broccoli is a quick side dish perfect for your next meal. The crisp broccoli with a drizzle of fresh lemon is healthy, refreshing and satisfying!

Roasted Broccoli with Lemon

If you are in a side dish rut, like I always tend to be, this is the perfect recipe for you! This is a super easy way to kick up your broccoli a notch, or five. 🙂 

Pairing great with a simple pasta like alfredo or garlic butter, fish, pork chops, or chicken, you can have endless meal planning possibilities! Imagine a plate full of chicken alfredo stuffed shells, lemon parm broccoli, and a cold salad. -Sounds so good, doesn’t it? 

What’s in this lemon parm broccoli?

  • Broccoli
  • Canola Oil Cooking Spray
  • Salt and Pepper
  • Grated Parmesan cheese
  • Lemon

How to make Roasted Broccoli with Lemon

Preheat your oven to 450 degrees and wash/dry your fresh broccoli heads. Break the head of the broccoli apart into small, bite-sized pieces and arrange them on a cookie sheet. You could use also purchase a bag of pre-washed and portioned broccoli to cut down on prep if you’d rather. 

Lightly spray the broccoli with cooking spray and season with salt and pepper. Alternatively, you can drizzle and toss the broccoli in a small amount of canola oil. I like to use they spray because it makes it so easy to lightly coat the broccoli.

Roast them in the oven for 15 minutes, but halfway through the cooking process, stop to shake the broccoli quickly. Sprinkle the grated parmesan onto the broccoli and cook for an additional 5 minutes. I actually like to use the powdered parmesan in the green can for this, it crisps up quite nicely!

Remove the broccoli from the oven and then squeeze the juice of 1/4-1/2 lemon over the broccoli. You’ll want to serve immediately while it is still warm.

Do I have to use fresh parmesan cheese?

Nope, I actually prefer to use the powdered parmesan in the green can for this recipe. Either will work great though! 

Can I freeze this lemon broccoli parm?

For the best results, I do not recommend freezing this dish.

Lemon Parmesan Broccoli

Cook Time: 15 minutes
Servings: 6

Ingredients 

  • 1 head broccoli
  • canola oil cooking spray
  • salt and pepper
  • 1/2 cup parmesan cheese, in the green can
  • 1/2 fresh lemon

Instructions 

  • Preheat oven to 450°.
  • Break the head of broccoli apart into small, bite sized pieces. Arrange on a cookie sheet.
  • Lightly spray the broccoli with the Canola Oil Spray.Season with Salt and Pepper.
  • Roast in the oven for 15-20 minutes, shaking the pan to move around the broccoli halfway through.
  • Sprinkle the parmesan cheese onto the broccoli during the last 5 minutes of cooking.
  • Squeeze 1/4-1/2 of a fresh lemon over the broccoli just before serving.
  • Serve hot.
