Another week, another easy rotisserie chicken dinner! This hawaiian chicken recipe is about to become your summer anthem.

Hawaiian Chicken Recipe

This recipe for hawaiian chicken is seriously so easy it should be criminal! But the simplicity of this meal does not compromise on the robust flavor it brings. 

Hawaiian teriyaki chicken is fresh and sweet, with all the ease demanded by summer evenings. In my house it is picky eater approved (!) and I love that it can be on the table in only 15 minutes.

Because of aforementioned picky eaters, I keep this meal pretty basic. But if you’d like, I think adding more veggies like broccoli or carrots would be extra yum.

What is in Hawaiian Chicken?

  • Rotisserie chicken (or other cooked chicken) – I like to use rotisserie chicken because it makes this dish so insanely quick and easy! 
  • Red bell pepper, diced
  • Diced pineapple – I opted for fresh pineapple (‘tis the season), but you can use fresh or canned. 
  • Pineapple juice – I typically have little cans of pineapple juice in my pantry for when I make smoothies. 
  • Soy sauce – Can sub low sodium if you’d like. 
  • Water
  • Granulated sugar
  • Ginger
  • Garlic
  • Cornstarch – This acts as a thickening agent as the sauce heats up.

How to Make Easy Hawaiian Chicken

  1. In a large skillet over medium heat, cook the bell pepper (and additional veggies if desired) with a little oil until almost tender.
  2. Add in the diced rotisserie chicken and diced pineapple. Continuing to stir every once in a while until heated through.
  3. In a separate bowl, combine the pineapple juice, soy sauce, water, granulated sugar, ginger, garlic and cornstarch. Whisk until combined.
  4. Pour the liquid into the pan with the pepper, pineapple and chicken. The sauce will thicken and coat the dish. Stir to cover evenly.
  5. Serve over rice and enjoy!

What else can I add  to this Hawaiian chicken recipe?

I’ve kept this recipe pretty simple to please my picky eaters, but this recipe is SUCH  a good base to add to. You can really add any extra veggies you’d like – I am dying to try adding in broccoli, carrots and snap peas, but you really can’t go wrong with additional veggies! I also think adding some chopped cashews would give it such a fun crunch.

How do I store leftovers of Hawaiian chicken and how long will it last?

Store your sauce and rice in separate airtight containers in the fridge for 3-5 days (but I doubt it will last that long)!

Ingredients 

  • 2 cups diced rotisserie chicken (or other cooked chicken)
  • 1 cup red bell pepper, diced

  • 1/4 cup water
