July’s Cookie of the Month
The Cookie: Gelato Sandwich Cookies
This cookie is part summer-time tribute and part love letter to Rome’s favorite frozen treat, gelato. You’ll enjoy two tender waffle cone infused cookies sandwiching a scoop of gelato in July’s bougie version of the Cookie of the Month club.
The Movie: “The Lizzie McGuire Movie”
When a middle school class trip to Rome (lucky them!) finds Lizzie McGuire (Hillary Duff) impersonating an international popstar, you know it’s bound to be cheesy in all of the best ways. Why not take a crazy chance on this formative movie experience? You’re going to love it!
The Activity: Lip Sync Battle
Step into Lizzie’s shoes and prepare to lip sync your heart out with your friends! Dress up in your finest early 2000’s outfits and get ready to put on a show. Bonus points if the song you choose is from the original movie soundtrack – I will be performing an all-out version of “Why Not”. (And no, there will NOT be video evidence). Ingredients in Waffle Cone Cookies
You can find exact quantities and directions in the recipe card below.
- Salted butter, softened – I always use salted butter in my bakes. You can use unsalted butter, if preferred. If you do that, just add a pinch of unsalted butter in the dough.
- Brown sugar
- Granulated sugar
- Eggs
- Vanilla
- All-purpose flour
- Waffle cones, crushed to a coarse powder – You can crush these in a bag with a rolling pin or by pulsing it a few times in your blender or food processor.
- Baking soda
- Baking powder
- Salt

How to Make July’s Cookie of the Month
- Preheat the oven to 350°F (180°C). Line a cookie sheet with either parchment paper or a silicone baking mat. Set aside.
- In the bowl of a stand mixer or with an electric hand mixer, cream together the butter, brown sugar and granulated sugar.
- Scrape the sides and add in the eggs and vanilla.
- Add the flour, crushed waffle cones, baking soda, baking powder and salt. Mix until a soft dough forms.
- Scoop the dough into 1 1/2 tbsp portions and arrange on the prepared baking sheet.
- Bake at 350°F (180°C) for 10-12 minutes. DO NOT OVER COOK. They won’t turn golden brown, they should expand and flatten slightly and no longer look wet on top when you pull them out. Allow them to cool on the pan for 5 minutes before transferring to a wire cooling rack.
- Create sandwiches by scooping your favorite gelato and sandwiching it between two cool cookies. Enjoy!

Storing Gelato Sandwich Cookies
Store the cookies at room temperature in an airtight container for up to 3 days. When you are ready to eat, assemble sandwiches with the gelato and enjoy!

- 2 1/3 cups (354g) all-purpose flour
- 9 waffle cones, crushed to a coarse powder (1 1/2 cups)
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
