Chocolate Strawberry Cheesecake Cookies
I can not believe it, but here we are and I’m sharing the very last Valentines Day recipe for the year! Previously I’ve shared Caramel Brownies, Chocolate Covered Strawberries, Fondue and Meringue Cookies! I might be biased, but I think I saved the very best for last!
Not only are these cookies absolutely delicious (ahem, I’m looking at you rich, chocolatey, fudgey cookie!) they look super fancy and totally festive.
Spoiler alert: they are so dang easy.
Seriously! If you want to impress someone this year (or really, these can and should be made all year long!) this is the dessert to make! I don’t know about your kids, but mine always LOVE frosting their very own cookie. I’m a big believer in kids in the kitchen and this is one of my favorite ways to let them help. 😊
How to make Chocolate Strawberry Cheesecake Cookies
First, cream together butter, sugar and brown sugar. Make sure to pack the brown sugar! This helps the cookies be extra chewy and fudgey.
You can use a stand mixer or and electric hand mixer to do this.
Next, add in vanilla and an egg. Cream this together until the mixture becomes literally light and fluffy. Light as in the color, the mixture will lighten!
Then add in cocoa, flour, salt and baking soda. Mix this slowly. Once the flour starts to incorporate you’ll add a quick dash of milk. Then continue to mix until the cookie dough comes together.
It will be slightly sticky, that is a-okay!
Scoop the dough and arrange the cookies on an un-greased cookie sheet. I like to use a cookie scoop to scoop my cookies out, that way they are uniform in size. For the perfect looking cookie, make sure to roll the dough in the palms of your hands to smooth out the edges. This actually makes a big difference in the final look of the cookie.
Bake at 350° for 7-9 minutes, or until the cookies are puffy and no longer glossy. Pull out of the oven and allow to cool completely on the pan.
While the cookies are baking and cooling, let’s make ourselves the best cream cheese frosting you’ll ever eat!
The cream cheese frosting includes a little bit of butter, cream cheese, powdered sugar, vanilla and a pinch of salt. Use your hand mixer, cream all of the ingredients together until SMOOOOOTH.
Once the cookies have cooled, either spread or use a piping bag and tip to add the frosting to the tops of each cookie.
Once all of the cookies have frosting on them, slice fresh strawberries in half (through the green stem) and place each strawberry into the frosting.
Store the cookies in the fridge and serve those bad boys COLD. Trust me, its is delicious.
