Caramel Brownies- Stuffed with Caramel Kisses- Easy and Fast!

I polled over on my Instagram Stories a week or so ago about what everyone was looking for recipe wise when it comes Valentine’s Day. Overwhelming majority reported that they go out to eat on Valentines day but are in the market for a fancier, yet easy DESSERT!

Oh, and Chocolate. Everyone said ‘CHOCOLATE EVERYTHING!’. I already have Chocolate Covered Strawberries, Chocolate Cut-Out Cookies and the best chocolate frosting around soooo..

Today I give you the best of both worlds! Totally beginner easy, but tastes like you spend all day in the kitchen. These brownies are the bomb digity, I tell you. 

Super rich, fudgey brownies stuffed with actual Caramel Kisses! Could these get any better? Unless your idea is to add a scoop of vanilla ice cream on top.. no, I don’t think they could.

This brownie recipe is one that has been in my family for YEARS! I modified it just slightly to give us a fudgier center, but let me tell you, this brownie recipe is the bees knees! 

Let me tell you, no crazy ingredients. Just simple stuff you already have in your cupboard. Takes maybe 5 minutes to whip together.. Your oven will take longer to preheat! Speaking of ovens.. these bad boys only bake for 25 minutes. Honestly, having to bake brownies for 45-55 minutes is just plain cruel. 

These brownies are great hot, straight out of the oven or after they have been hanging out for a day. Oh, and they freeze like a dream!

How to make Caramel Brownies

To make the brownie batter, the first step (and a very important one at that!) is to melt your butter and whisk in the cocoa. You will end up with a very dark syrupy type substance. 

You’ll then add sugar into the butter and cocoa mixture. Use an electric hand mixer and mix until well combined.

The sugar will cool the butter down to about room temperature, but it is always a good idea to check the temperature before this next step.

Next we will add in the eggs and vanilla. It is important to check the temperature because if the mixture is hot you will cook the eggs! we definitely don’t want to cook those until the brownies are in the oven.

Mix, again with an electric mixer, until completely combined and smooth. The color will lighten a bit during this step.

Lastly, add in salt and flour.  The batter will be very very thick, but should come together easily.

Brownie batter COMPLETE!! The next step is to take half of the brownie batter and spread it into the bottom of a parchment paper lined 8×8 pan. 

Do you have to use the parchment paper? No, but it makes life so much easier! If you decide to forgo the parchment paper, make sure to spray your pan with non-stick spray. 

ps. I find it so much easier to work with parchment paper if I crumble it into a ball first and then flatten it back out again.

Next, unwrap and arrange caramel kisses in a layer on top of the brownie batter. 

Marlee absolutely LOVED helping with this step. My youngest, Brielle, loved stealing the kisses and running away with them. We all had a good time working on these brownies!

One by one, work until you have covered the entire pan of brownies. I used 36 caramel kisses to cover the pan of 8×8 brownies.

Finally, drop the remaining brownie batter in spoonfuls on top of the kisses. Use a spatula to spread and work the brownie batter until it is just about covering all of the kisses.

Bake at 350° for 25 minutes. Allow to cool for at least 5 minutes before cutting and serving! 

The Caramel Brownies are great served as is or with a scoop of vanilla ice cream!

  • 36 caramel kisses unwrapped

Instructions

  • Preheat the oven to 350°. Line a 8x8 pan with parchment paper. Set aside.
  • Melt the butter, whisk in the cocoa until there are no more lumps.
  • Pour the butter and cocoa mixture into a large bowl. Add in the sugar and mix using an electric mixer until well combined. It will be grainy.
  • Mix in the eggs and vanilla thoroughly.
  • Add the Flour and salt to the bowl and combine. The batter will be very thick.
  • Divide the batter in half, spread one half into the bottom of the lined 8x8 pan.
  • Arrange the kisses on top of the spread batter, pressing the kisses down into the batter a little bit.
  • Place the remaining batter on top of the kisses by the spoonful. Spread and work until the the batter is just about covering all of the kisses.
  • Bake at 350° for 25 minutes.
  • Allow to cool for 5 minutes before slicing.
