Chocolate Peanut Butter Cookies featuring MINI REESE’S PIECES!

In my little town of 8,000 people we have 2 local grocery stores. Like many people, I am a creature of habit and usually go to the same grocery store week after week. (Okay, who am I kidding. I should say day after day!)

But, one fateful day last week my usual store was completely sold out of small Granny Smith Apples! I was teaching a class of youth how to make Caramel Apples and needed those little Granny Smith’s! So, I went to the other grocery store. I might have felt like a traitor walking through those doors BUT..

My life was forever changed. Not only did they have the apples I needed but their baking isle was absolutely INSANE! I’ve never wanted to spend so much money on chocolate chips in my entire life!

Don’t worry, I refrained but did manage to walk away with a bag of these mini Reese’s Pieces (and a bag of mini Reese’s Cups, extra semi sweet chocolate chips, and some salted caramel chocolate chips). Mini Reese’s Pieces are meant for rich chocolate cookies. I know it, and now it’s time for you to make these and know it too. #fistbump

How to make Chocolate Peanut Butter Cookies with Reese’s Pieces

For the chocolate cookie base, cream butter, granulated sugar and brown sugar together until light and creamy. I like to use a stand mixer, an electric hand mixer will work well, too!

After the butter and sugars are combined, add in an egg and vanilla. Mix thoroughly, until light in color and very creamy.

Next flour, soda, salt, and cocoa powder are added to the mixer.

Start mixing in the dry ingredients and when they are almost completely mixed in, add a splash of milk to the cookie dough. Mix until well combined.

Fold mini Reese’s Pieces into the cookie dough.

Roll the cookie dough into equal sized balls, I like to use a cookie scoop to easily portion out the dough equally. To get pro looking cookies, roll the dough in your hands after scooping to create a seamless ball. Then place 3 or 4 extra Reese’s Pieces candies on top of the ball.

Bake at 350° for 7 minutes. The cookies will be puffy and no longer glossy on top when they come out of the oven. Let the cookies cool on pan for 5 minutes before transferring to a cooling rack.

Best eaten WARM (in my opinion ?) but will stay fresh for a couple of days in an air tight container.

Ingredients

  • 3/4 cups butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tbsp vanilla
  • 1 1/2 cup flour
  • 1/2 cup cocoa
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp milk
  • 1 cup mini Reese’s Pieces

Instructions

  1. Preheat oven to 350°.
  2. Cream together the butter, granulated sugar and brown sugar.
  3. Add the egg and vanilla. Mix until light in color and creamy.
  4. Add in the dry ingredients (flour, cocoa, baking soda and salt), mix into the dough. When the dry ingredients are about halfway mixed in, add the milk to the dough. Mix until completely combined. The dough will be very soft.
  5. Fold in the mini Reese’s Pieces.
  6. Scoop or roll the cookie dough out into equal sized balls. Arrange on a parchment paper lined cookie sheet.
  7. Bake at 350° for 7-9 minutes or until the cookies are puffy and no longer glossy on top.
  8. Allow the cookies to cool for 5 minutes on the pan before transferring to a cooling rack.
  9. Stays fresh for a couple of days in an airtight container.
