A hearty, healing dinner for families in a hurry! This easy chicken noodle soup recipe is souper good and extremely quick.

Chicken Noodle Soup Recipe

If you were to look up “comfort food” in the dictionary, chicken noodle soup would likely be the first result. This soup is hearty, flavorful and the perfect cure to any type of day you may be having. The best part? This is an ultra easy chicken noodle soup recipe that won’t take you hours to make! 

On top of being a quick way to feed a crowd, this rotisserie chicken noodle soup is insanely delicious. You can even adjust the recipe to your preferences (adding in extra veggies or a splash of heavy cream to make it creamy), so you’re sure to hit a home run with your family. I try not to make promises I can’t keep, but I’m pretty sure this is a dish your whole family will ask for a second serving of.

What Ingredients are in Rotisserie Chicken Noodle Soup?

  • Chicken broth – You can use vegetable broth if that’s what you prefer.
  • Dried parsley – I use dried parsley, but you could use fresh if you’d like!
  • Egg pasta  – The egg pasta that I use is the brand ‘country pasta’. This is much different than egg noodles. Egg noodles boil and cook extremely fast, whereas this egg pasta will take about 17 minutes of boiling to cook through and will stay thick and are very hearty.
  • Carrots 
  • Celery – Feel free to add any additional veggies you’d like to to this soup! 
  • Rotisserie chicken  – Rotisserie chicken makes this super easy, but you could use leftover grilled chicken or crockpot chicken if you have some on hand!
  • Salt and pepper

How to Make Homemade Chicken Noodle Soup

  1. In a large stock pot, add the chicken broth and dried parsley. Place a lid on the pot and bring to a boil.
  2. Once boiling, add the egg pasta and reduce the heat to simmer.
  3. While the pasta is simmering, wash and cut the carrots and celery. Dice the chicken.
  4. After the pasta has been boiling for about 7 minutes, add the carrots, celery and chicken to the pot.
  5. Simmer until the carrots and celery are tender.
  6. Season with salt and pepper, to taste.
  7. Serve with a hearty roll or some crackers.

What’s the best way to store leftover chicken noodle soup?

Let your soup cool and store in an airtight container in the fridge for up to 4 days.

What are some variations of this soup I can try?

You can add additional veggies like onions, carrots, and peas to the soup. You can also switch up the type of noodles you use as desired. To make it creamier, you can also add a splash of heavy cream!

Ingredients

  • 64 oz chicken broth
  • 1-2 tbsp dried parsley
  • 8 oz egg pasta
  • 2 cups carrots
  • 1 cup celery
  • 2 cups rotisserie chicken
  • salt and pepper, to taste
