Chicken Noodle Soup

A hearty, healing dinner for families in a hurry! This easy chicken noodle soup recipe is souper good and extremely quick.

Ingredients

  • 64 oz chicken broth
  • 1-2 tbsp dried parsley
  • 8 oz egg pasta
  • 2 cups carrots
  • 1 cup celery
  • 2 cups rotisserie chicken
  • salt and pepper, to taste

Instructions

  • In a large stock pot, add the chicken broth and dried parsley. Place a lid on the pot and bring to a boil.
  • Once boiling, add the egg pasta and reduce the heat to simmer.
  • While the pasta is simmering, wash and cut the carrots and celery. Dice the chicken.
  • After the pasta has been boiling for about 7 minutes, add the carrots, celery and chicken to the pot.
  • Simmer until the carrots and celery are tender.
  • Season with salt and pepper, to taste.
  • Serve with a hearty roll or some crackers.
