Chicken Noodle Soup
A hearty, healing dinner for families in a hurry! This easy chicken noodle soup recipe is souper good and extremely quick.

- 64 oz chicken broth
- 1-2 tbsp dried parsley
- 8 oz egg pasta
- 2 cups carrots
- 1 cup celery
- 2 cups rotisserie chicken
- salt and pepper, to taste
In a large stock pot, add the chicken broth and dried parsley. Place a lid on the pot and bring to a boil.
Once boiling, add the egg pasta and reduce the heat to simmer.
While the pasta is simmering, wash and cut the carrots and celery. Dice the chicken.
After the pasta has been boiling for about 7 minutes, add the carrots, celery and chicken to the pot.
Simmer until the carrots and celery are tender.
Season with salt and pepper, to taste.
Serve with a hearty roll or some crackers.
