Biscoff Bars are a brown sugar-forward cookie bar packed with melty white chocolate chips and a creamy layer of Biscoff spread. They’re sure to take your taste buds to new heights! (And yes, plane pun intended because Delta is well-known for handing out Biscoff cookies).

Biscoff Bars Recipe

I am a little obsessed with cookie bars (hi, they’re so easy) and a whole lot obsessed with these Biscoff Bars. Let me explain myself. 

The cookie bar base is soft and chewy with a slightly crisp exterior. Scattered inside this base you’ll find little pockets of melty white chocolate that perfectly compliment the caramel/brown sugar/slight spice of the creamy biscoff spread. And together, these textures and flavors make a powerhouse dessert. 

I’ve been a fan of biscoff cookies for awhile (the proof can be found in my White Chocolate Biscoff Cookies, Biscoff Cookies, and Oatmeal Biscoff cookies) but these Biscoff Bars are my favorite in the class. You do not have to scoop the dough into balls. You do not have to  stuff sticky biscoff spread into the middle. Just spread the *addictive* biscoff spread on top of a layer of dough like it’s peanut butter on toast. I told you – these cookie bars are so easy. 

If you’re not a Biscoff person, that’s cool. We can still be friends! I recommend trying these cookie bars with Nutella instead (it’s also unduly delicious).

Ingredients in Cookie Bars

You can find specific quantities and instructions in the recipe card below! 

  • Salted butter – Salted butter is my preference! But unsalted butter will work as well – you may just want to add a pinch of salt to the dough. 
  • Brown sugar
  • Granulated sugar
  • Egg
  • Vanilla 
  • All-purpose flour
  • Baking soda
  • Salt 
  • White chocolate chips – You can also cut up a white chocolate bar and it would be amazinggg. 
  • Jar creamy biscoff spread – If you cannot find this in stores, you can make it at home with my recipe for homemade cookie butter (biscoff spread).

How to Make Cookie Bars 

  1. Preheat the oven to 350° F (180·C). Spray a 9×13 pan with non-stick spray and set aside.
  2. In the bowl of a stand mixer or with an electric hand mixer, cream together the butter, brown sugar, and granulated sugar until light in color and fluffy in texture. This will take about 2 minutes. 
  3. Scrape down the sides and add in the egg and vanilla. Mix until well combined.
  4. Next, add the dry ingredients (flour, baking soda and salt). Mix until incorporated and add the white chocolate chips.
  5. Once a soft dough has formed, you will press half of the dough into the bottom of the prepared pan.
  6. Using a spatula or spoon, spread the Biscoff cookie butter on top of the cookie dough in the pan.
  7. On top of the biscoff layer, crumble the remaining cookie dough and press it in slightly. 
  8. Bake at 350°F (180°C) for 15-17 minutes.
  9. Allow the bars to cool completely before cutting and serving. Enjoy!

What is Biscoff?

A Biscoff cookie is a caramelized, brown sugar crunchy cookie with a slight touch of spice. This recipe calls for Biscoff spread, which is kind of like peanut butter – only instead of blending peanuts until smooth, it blends Biscoff cookies until smooth. TL;DR: it’s all delicious.

How should I store Biscoff Bars?

Once cooled, store your cookie bars in an airtight container on the counter for 3-5 days! These Biscoff Cookie Bars also freeze really well and can be stored in a resealable freezer bag for up to 3 months.

Biscoff White Chocolate Chip Bars

Ingredients

  • 1 cup (167g) salted butter
  • 1 cup (246g) brown sugar
  • 1/2 cup (115g) granulated sugar
  • 1 egg
  • 1 tsp vanilla
  • 2 1/4 cup (342g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup white chocolate chips
  • 14 oz creamy biscoff spread

Instructions 

  • Preheat the oven to 350° F (180·C). Spray a 9×13 pan with non-stick spray and set aside.
  • In the bowl of a stand mixer or with an electric hand mixer, cream together the butter, brown sugar, and granulated sugar until light in color and fluffy in texture. This will take about 2 minutes.

  • Scrape down the sides and add in the egg and vanilla. Mix until well combined.

    2 1/4 cup (342g) all-purpose flour, 1 tsp baking soda, 1/2 tsp salt, 1 cup white chocolate chips

  • Using a spatula or spoon, spread the Biscoff cookie butter on top of the cookie dough in the pan.

    I LOVE biscoff cookies when I travel and these are so good! These were super easy and quick to make. I will absolutely make them again! Thank you for sharing this recipe!

    These are really, really good!!!! My bottom layer of dough didn’t spread all the way to the edge of the pan. It was way too sticky. I gave up and just poured the biscoff on top (I microwaved it for a few seconds first). Then I used a small cookie soop and dropped the rest of the dough on top. It baked up perfect. It didn’t matter that it didn’t spread all the way- it spread in the oven.

  3. Hi! I love your recipes! Just looking for clarification on this one. It calls for one cup of butter or 167g, I always thought one cup of butter was 227g?!?
