My love for easy rotisserie chicken dinners will never, ever fade. And this BBQ chicken salad may be my favorite until the end of time.

BBQ Chicken Salad Recipe

The start of the school year always has me craving more vegetables and easy dinner ideas. Lucky for you, BBQ chicken salad combines both of those things in the most perfect way! Filling but not heavy, you’ll be working this extremely quick and yummy dinner into your meal plan on repeat. 

Perfect for throwing together after soccer practice before you have to leave for dance, your whole family is going to love this protein-filled and veggie-packed BBQ chicken salad. This salad is also extremely versatile – meaning you can omit or add-in extras according to your family’s needs. Try it out and enjoy!

Ingredients in BBQ Chicken Chopped Salad

*The beauty of this salad is that it is so versatile! Feel free to use any amount of any of the ingredients. Double it to make it larger, or cut back to make it smaller and more personal sized.

  • Head leafy lettuce, washed and chopped
  • Corn – You can use fresh or canned. 
  • Red onion, sliced
  • Chopped rotisserie chicken – Any cooked chicken will do! I just like to use rotisserie chicken for ease. 
  • Black beans
  • Shredded cheddar cheese  – Feel free to swap for any other cheese you desire. Bleu cheese or monterey jack  would actually be so good in this! 
  • Crushed tortilla chips
  • Bbq sauce – I just use Sweet Baby Rays, but you could opt for a spicier option if you want this salad to have a little kick. 
  • Ranch dressing

How to Make BBQ Ranch Chicken Salad

  1. Prep by washing and draining/cutting all needed ingredients. 
  2. Toss all of the ingredients besides the bbq sauce and ranch together in a large bowl.
  3. Drizzle the bbq sauce and ranch onto the salad and toss to coat.
  4. Enjoy!

What other vegetables or toppings go well in a BBQ chicken salad?

Oh man, so many things pair well with this salad. You can add in diced bell peppers, banana peppers, bleu cheese, chickpeas, zucchini – the list goes on & on. Let me know what combos you’ve tried and loved!

How do I prevent the salad from becoming soggy if I want to pack it for lunch?

This salad actually travels really well! Just pack the ranch and BBQ sauce separately and drizzle on right before serving.

BBQ Chicken Salad

Ingredients 

  • 1 head leafy lettuce, washed and chopped
  • 1 cup corn
  • 1/3 cup red onion, sliced
  • 2 cups chopped rotisserie chicken
  • 1/2 cup black beans
  • 3/4 cup shredded cheddar cheese
  • 1/2 cup crushed tortilla chips
  • 1/4 cup bbq sauce,
  • 1/4 cup ranch dressing

Instructions 

  • Prep and toss all of the ingredients besides the bbq sauce and ranch together in a large bowl.
  • Drizzle the bbq sauce and ranch onto the salad and toss to coat.
