Stained glass cookies are a delicious sugar cookie with a crunchy and sweet lollipop style filling. While stained glass sugar cookies are often seen as a Christmas cookie, they’re great any time of the year (just swap out the hard candies for colors fitting the season or holiday!)

Stained glass cookies are a very easy to make cookie recipe and one that doesn’t require too much on your part. Plus, this recipe doesn’t need dough chilling!

Another great thing about these super cute stained glass cookies is that you can have your kids help by giving them bags of Jolly Ranchers to crush while you make the dough. They can also help to use the cookie cutters and sprinkle the crushed candies on the pan. This is a great way to get in a little extra family time.

If you’d rather use something soft and chewy instead of the hard Jolly Ranchers, Sweedish Fish could be used instead!

What’s In Stained Glass Sugar Cookies?

Here is a quick peek at what ingredients you’ll need on hand when making this recipe. Check out the recipe card below for the exact measured amounts and the steps to follow!

  • Butter, (salted butter works great here!)
  • Granulated Sugar
  • Vanilla extract
  • Egg
  • All purpose Flour
  • Baking Powder
  • Red or Pink Jolly Ranchers (can also use Swedish fish)

How to Make Stained Glass Sugar Cookies

Preheat your oven to 350° and then cream together the butter and sugar in the bowl of a stand mixer for a full 3 minutes. We are looking to achieve light in color and fluffy in texture. Then the vanilla and the egg are added in. Mix until combined.

Add in the flour and the baking powder to the bowl. Mix slowly at first and gradually get faster until the dough comes together. The texture should be like Playdoh. Add a little flour or water if needed to get it to a soft, pliable consistency.

Turn the dough out onto a floured surface. Use a rolling pin and then roll until about 1/4 inch thick. Use cookie cutters to cut out a large circle with a smaller heart in the middle. Transfer the cookies to a silicone or parchment-lined cookie sheet.

Carefully sprinkle the crushed jolly rancher into the heart, filling it up completely. (The Jolly Ranchers will get thinner as it bakes.)

Bake at 350° for 8-10 minutes or until the cookie portion is puffy and no longer glossy and the Jolly Rancher is completely melted. 

Pull the cookies out of the oven BEFORE they start turning brown. If they turn brown, the cookie will be dry and ‘crackery’ instead of soft and chewy.

Allow them to cool completely on the pan before removing them.

Can You Freeze Stained Glass Cookies?

You can freeze any unused cookie dough for up to 3 months, but you may not want to freeze any finished stained glass cookies. This is simply because as the cookie thaws, the sugar may “melt” and become a weird wet mess. 

How Long Do Stained Glass Sugar Cookies Last?

You can expect that your cookies will last up to 3-5 days and still taste great when stored in an airtight container at room temperature.

Servings: 24 cookies

Ingredients 

  • 1 cup butter, room temperature
  • 1 cup granulated sugar
  • 2 tsp vanilla extract
  • 1 egg
  • 3 cups flour
  • 2 tsp baking powder
  • 10 -15 red or pink jolly ranchers, crushed

Instructions 

  • Preheat oven to 350°.
  • Cream together the butter and sugar in the bowl of a stand mixer for a full 3 minutes. Scrape sides and add in vanilla and egg. Mix until combined.
  • Add flour and baking powder to the bowl. Mix slowly at first gradually getting faster until the dough comes together. The texture should be like Playdoh. Add a little flour or water if needed to get it to a soft, pliable consistency.
  • Turn out onto a floured surface. Use a rolling pin and roll until about 1/4 inch thick. (The cookies will not rise while baking, they will not get thinner while baking. Roll out to your desired FINISHED thickness.)
  • Use cookie cutters to cut out a large circle with a smaller heart in the middle. Transfer the cookies to a silicone or parchment lined cookie sheet.
  • Carefully sprinkle the crushed jolly rancher into the heart, filling it up completely. (the jolly ranchers will get thinner as it bakes.)
