This is Crave’s Rockstar Cookie in cookie bar form! It packs toffee, pretzels, and tons of chocolate in a slightly gooey vanilla cookie base. In short, it is sweet + salty perfection.

Cookie Bar Recipe
Making the viral Crave Rockstar Cookies into cookie bars is THE MOVE. They are SO GOOD and ridiculously easy. I honestly cannot believe it took me so long to do this, it’s a game changer. Here’s why you’ll love them:
- This is based on the actual Crave Cookies recipe but instead of having to scoop out individual cookies, you press the dough into a pan, pop it into the oven, and walk away. So easy!
- These cookie bars bursting with flavor + lots of yummy textures. Pretzels, toffee bits, chocolate, and more chocolate! But truly, they’d be good with so many other mix-ins, too, so feel free to get creative!
- The cookie bar has a soft vanilla base that is yummy by itself but also ideal for loading up with a bunch of other mix-in goodness.

What Ingredients are in Cookie Bars?
All quantities and directions can be found in the printable recipe card below.
- Salted butter – I always use salted butter. Unsalted butter will work as well, just add an extra pinch of salt to the dough.
- Brown sugar
- Granulated sugar
- Egg
- Vanilla
- All-purpose flour
- Baking soda – This will help the bars puff up slightly.
- Salt
- Milk chocolate chips
- Semi sweet chocolate chunks – I just buy these in the baking aisle of my local grocery store. If you cannot find the chocolate chunks, you can buy a semi sweet chocolate bar and chop it up.
- Crushed pretzels – I used regular pretzels, but crushed pretzel sticks will also work!
- Toffee bits
- Flakey sea salt – Use this as garnish, if desired.

How to Make Rockstar Cookie Bars
- Preheat the oven to 350° F (180°C). Spray a 9×13 pan with non-stick spray and set aside.
- In the bowl of a stand mixer or with an electric hand mixer, cream together the butter, brown sugar and granulated sugar until light in color and fluffy in texture. This will take about 2 minutes.
- Scrape the sides and add in the egg and vanilla. Mix until well combined.
- Next, add the flour, baking soda and salt. Mix until a soft dough forms.
- Now you will add in all of the mix-ins– the milk chocolate chips, chocolate chunks, pretzels and toffee bits, and mix until evenly distributed.
- Finally, press the dough into the prepared 9×13 pan and sprinkle the top with sea salt.
- Bake at 350°F (180°C) for 15-17 minutes or until the edges and the top begin to turn golden brown.
- Allow the bars to cool completely before cutting. Enjoy!

How should I store cookie bars?
Once cooled, store your Rockstar Bars in an airtight container on the counter for 3-5 days!
Can Rockstar Bars be frozen?
Yessiree! Allow cookie bars to cool completely and place in a ziptop bag. Store in the freezer for up to 3 months!

- 1 cup (200g) semi sweet chocolate chunks
- 3/4 cup (45g) crushed pretzels
- 3/4 cup (132g) toffee bits
- flakey sea salt, for garnish

Instructions
- Preheat the oven to 350° F (180°C). Spray a 9×13 pan with non-stick spray and set aside.

As a bar pan cookie, BRILLIANT! I love this recipe and make it often because everyone else loves it as well. I was up for making them again, but really didn’t want to spend all the time doing the individual cookies when I saw your bar pan idea. Amazing! Thank you!!

Mine took 28-30 minutes to bake! Were raw at 15! Did anyone else find this or did I do something wrong? Baked in a 9×13 light aluminum pan and I bake a lot, usually pretty much know what I’m doing and followed recipe exactly
The 15-17 minute bake time is WAY off. I also had to bake closer to 30 minutes (I lost track due to checking every 2-5 minutes). I use an oven thermometer and was definitely at 350°. That’s the reason for the 4 stars- bars were good but incorrect baking time caused part of the bars inedible.
In the ingredients, it says crushed pretzels. How “crushed” are they, because I see good-sized pieces in the photo. Are they supposed to be crushed to powder or just broken up?
I just break them up slightly! Definitely don’t crush to a powder.
So easy and so good. I am a baker, but anyone could throw this recipe together with whatever they have on hand. I did it after dinner one night and the kids said it was top tier. They did take slightly longer to bake in my oven. Thank you for sharing your recipes!
