This is Crave’s Rockstar Cookie in cookie bar form! It packs toffee, pretzels, and tons of chocolate in a slightly gooey vanilla cookie base. In short, it is sweet + salty perfection.

Cookie Bar Recipe
Making the viral Crave Rockstar Cookies into cookie bars is THE MOVE. They are SO GOOD and ridiculously easy. I honestly cannot believe it took me so long to do this, it’s a game changer. Here’s why you’ll love them:
- This is based on the actual Crave Cookies recipe but instead of having to scoop out individual cookies, you press the dough into a pan, pop it into the oven, and walk away. So easy!
- These cookie bars bursting with flavor + lots of yummy textures. Pretzels, toffee bits, chocolate, and more chocolate! But truly, they’d be good with so many other mix-ins, too, so feel free to get creative!
- The cookie bar has a soft vanilla base that is yummy by itself but also ideal for loading up with a bunch of other mix-in goodness.

What Ingredients are in Cookie Bars?
All quantities and directions can be found in the printable recipe card below.
- Salted butter – I always use salted butter. Unsalted butter will work as well, just add an extra pinch of salt to the dough.
- Brown sugar
- Granulated sugar
- Egg
- Vanilla
- All-purpose flour
- Baking soda – This will help the bars puff up slightly.
- Salt
- Milk chocolate chips
- Semi sweet chocolate chunks – I just buy these in the baking aisle of my local grocery store. If you cannot find the chocolate chunks, you can buy a semi sweet chocolate bar and chop it up.
- Crushed pretzels – I used regular pretzels, but crushed pretzel sticks will also work!
- Toffee bits
- Flakey sea salt – Use this as garnish, if desired.

How to Make Rockstar Cookie Bars
- Preheat the oven to 350° F (180°C). Spray a 9×13 pan with non-stick spray and set aside.
- In the bowl of a stand mixer or with an electric hand mixer, cream together the butter, brown sugar and granulated sugar until light in color and fluffy in texture. This will take about 2 minutes.
- Scrape the sides and add in the egg and vanilla. Mix until well combined.
- Next, add the flour, baking soda and salt. Mix until a soft dough forms.
- Now you will add in all of the mix-ins– the milk chocolate chips, chocolate chunks, pretzels and toffee bits, and mix until evenly distributed.
- Finally, press the dough into the prepared 9×13 pan and sprinkle the top with sea salt.
- Bake at 350°F (180°C) for 15-17 minutes or until the edges and the top begin to turn golden brown.
- Allow the bars to cool completely before cutting. Enjoy!

How should I store cookie bars?
Once cooled, store your Rockstar Bars in an airtight container on the counter for 3-5 days!
Can Rockstar Bars be frozen?
Yessiree! Allow cookie bars to cool completely and place in a ziptop bag. Store in the freezer for up to 3 months!

Cookie Bars to love!

Looking forward to these. How gine do you crush the pretzels? Thanks.
I left some small chunks – you don’t want this to be a powder.
Do you use chocolate toffee bits or bit of brittle
I used Heath chocolate toffee bits!
Got this recipe in my email and just happened to have the ingredients on hand so we tried it (didn’t have toffee, substituted peanut butter chips). My family went CRAZY for these. Even my husband who is not a big sweet tooth guy, I found him eating 3 of these over the sink after dinner 😂) So that tells you these are GOOD. A new family fave for sure.
Ah! So glad you loved them. We kind of go feral for them ha.
This is everything I ever wanted in a cookie bars: saltiness, sweetness, chewiness. This is a must make recipe!
Is it packed brown sugar?
yes, packed!
Hey Karli! Wondering if I could add caramel sauce to these bars, like the Barnes and Noble cookie recipe but in bar form. Would I have to adjust the flour? TIA 🙂
Hi Emma – I haven’t tried adding caramel, but that sounds delicious! I would keep the flour content the same. I also have a caramel chocolate chip cookie bar if you’re interested in that: https://cookingwithkarli.com/caramel-cookie-bars/
My family loved these bars. Easy recipe to prepare. Yum!!
I would not normally question you – on ANYthing. But. Bake time. Are you confident. I’m at 22 minutes and the edges are barely browned and lovely. the middle is all soft and jiggly. added another 3. My other bake times are SPOT on…so I’m confused.
Hey Melissa, thanks for reaching out. I would double check your oven temp and make sure it is actually reading correctly! When I pull these out of the oven, the edges are starting to turn golden but the middle is still slightly gooey (not jiggly though). They will continue to bake just a bit while cooling off in the pan.
Wonderful recipe! They are easy to make and absolutely delicious. They cut nicely, which is great for packaging! Dessert bars are my favorite- these are getting added to the rotation.
Making them but do they freeze well?
Yes, fantastically! I would let the bars cool and then freeze between parchment for up to 3 months.
This is a question actually! I made the rockstar cookies and they came out hard. If I out them in an airtight container with a piece of bread, they softened up! What did I do wrong? They didn’t appear to be o rebaked, i.e., too brown. They were delicious though so I’m going to try these bars and underbake them? Thanks!
Thanks for asking – I’m wondering if the cookies may have been slightly overbaked. I like to underbake slightly and let them continue baking on the hot pan after it has been removed from the oven.
