Making these delicious pumpkin chocolate chip bars is similar to making pumpkin chocolate chip cookies, but instead of needing to take the time to roll out cookie dough balls, you’re just placing everything on a cookie sheet and baking. You can then cook it up and cut into as many pieces as you want. Perfect for dividing for family snack time.
Pro Tip: If you don’t cut the pumpkin chocolate chip bars, and you eat it straight off of the pan with a fork, you technically only ate one piece. 😉

How to make pumpkin chocolate chip bars
In a large bowl, combine the melted butter, sugar, vanilla and pumpkin using a hand mixer. Then add in the eggs and the milk. When everything is well combined, add in the flour, baking soda, salt, cinnamon, and pumpkin spice, and continue mixing until the batter forms without any lumps.
Fold in the chocolate chips using a large wooden spoon or similar utensil.
Then spread the dough into a greased cookie sheet and bake for about 20-25 minutes. The dough will be spread pretty thin on the cookie sheet, don’t worry though, the bars will rise quite a bit while baking. I like to sprinkle extra chocolate chips on top to make the final product extra pretty.
You will know that it is done when the top is no longer glossy, and you can insert a toothpick into the center and have it come out clean.
Then allow the giant cookie to cool in the pan before cutting into bars.
How to serve you Pumpkin Chocolate Chip Cookies
Of course, you can serve these as is, with a tall glass of milk! You could also serve warm with vanilla ice cream. If you really want to get wild adding a generous spread of delicious cream cheese frosting over the top of these pumpkin chocolate chip bars could be just the thing that get your tastebuds screaming!

Pumpkin Chocolate Chip Cookie Bars
Ingredients
- 1/2 cup butter melted
- 1 1/2 cups granulated sugar
- 1 1/2 tbsp vanilla
- 1 cup pumpkin puree
- 2 eggs
- 1 tbsp milk
- 2 cups all purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- 1/2 tsp pumpkin pie spice
- 2 cups chocolate chips
Instructions
- Preheat oven to 350°.
- Using a hand mixer, combine the melted butter, sugar, vanilla and pumpkin.
- Mix in the eggs and milk.
- Add the flour, soda, salt, cinnamon and pumpkin pie spice to the bowl and mix until combined. The batter will be soft.
- Fold in the chocolate chips. Spread the dough on to a greased cookie sheet.
- Bake for 15-20 minutes or until the top is no longer glossy and it passees the toothpick test.
- Allow the bars to cool on the pan. Cut and serve.

Can these pumpkin bars be frozen?

Sure! Just cut into bars, wrap and then freeze. When you are ready to eat them, take them out of the freezer and set them at room temperature for about 30 minutes.
