Mini Apple Pies- The perfect, single serving treat!

Apple pie is just one of those things I could.. err DO.. eat way too much of. I just can’t stop! Which makes these mini, single serving pies absolutely perfect!

Not only are they fun to make (and eat) but the kids love getting involved! These little Sugar Cookie Pie Crusts are so versatile, absolutely delicious with any pie filling. So many of my readers have told me that they will never go back to a regular old pie crust again after trying it!

Chocolate pie, Strawberries and Cream pie, Coconut Cream pie, Lemon Custard pie.. you name it, its TA-DIE-FOR.

I used these little Silicon Tart Molds to shape the crust. They are fairly inexpensive on Amazon and a great addition to any kitchen. ? Perfect little addition to your Christmas list.

How to make Mini Apple Pies from Scratch

The Sugar Cookie Crust

To make the Sugar Cookie Pie Crust, butter, sugar, egg white, vanilla, flour and baking powder are combined. The dough is rolled out and then cut. I use a 4 inch circle cookie cutter and that is absolutely perfect for the little tart molds! If you’d like, her is a more detailed post on the Sugar Cookie Pie Crust.

The dough is very forgiving and easy to work with. I simply centered the cut cookie dough onto silicon tart mold and then gently pushed with my fingers to fit the cookie dough into the mold.

Like I said above, with these particular tart molds, a 4 inch circle cookie cutter works perfectly.

Bake the crusts at 350° for 8 minutes. Let the crusts cool completely. After the crusts are completely cool, simply turn the molds upside down and gently peel and tap the crust out of the mold.

The Apple Pie Filling

While the pie crusts are baking and cooling, I like to make the apple pie filling. I like to use my Instant Pot to do this, but you could definitely do it on the stovetop if you’d rather.

I do have a detailed Apple Pie Filling recipe and post on my site already. I did make a few minor changes to the original recipe, however. The only changes that I made were to cut the apples smaller initially (because these little pies just require smaller apple pieces!) which then in turn changed the cook time. I also halved the recipe.

I diced the apples into small, 1/2 inch cubes and then cooked in my Instant Pot on Manual HIGH for 0 minutes. Like I said, you could make this on the stovetop, just simmer until the apples are fork tender.

Fill the pie crusts with warm apple pie filling and then top with whipped cream or ice cream!

Sugar Cookie Pie Crust (For Mini Pies)

Sugar Cookie Pie Crust is a sweet, chewy alternative to any pie crust. The from-scratch sugar cookie dough comes together in just a few minutes with only a handful of ingredients. This crust will take your favorite pie from good to AMAZING!

Ingredients

  • 1/2 cup butter
  • 1/2 cup sugar
  • 1 egg white
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 1 tsp baking powder

Instructions

  1. Preheat oven to 350°.
  2. Cream the butter and sugar together for 3 minutes.
  3. Scrape sides of bowl and add egg white and vanilla. Combine thoroughly.
  4. Mix in flour and baking powder until completely combined. The texture should be similar to playdoh. If it is too wet, at a little more flour. If it is too dry, at a little water. 1 1/2 cups is always about perfect for me.
  5. Roll the dough out until you have a 1/4 inch thick circle.
  6. Use a 4 inch circle cookie cutter and cut out the dough. Line each Silicone Tart Moldwith a circle of dough.
  7. Bake at 350° for 8 minutes, or until the crust is no longer glossy.
  8. Cool completely before removing the crust from the mold.

 

Apple Pie Filling (For Mini Pies)

Apple Pie Filling is the homemade version of canned apple pie filling. You won’t believe how easy it is to make Homemade Apple Pie filling from this recipe. Make it on the stove top or in your Instant Pot, either way the soft apples covered in the thick brown sugar and cinnamon filling will knock your socks off!

Ingredients

  • 3 apples peeled and diced into 1/2 inch cubes
  • 1/2 tbsp lemon juice
  • 1/3 cup brown sugar
  • 2 tbsp sugar
  • 1/2 tsp cinnamon
  • pinch salt
  • 1/2 + 1/3 cup water
  • 3 tbsp cornstarch

Instructions

  1. Toss the peeled and diced apples together with the lemon juice. Set aside.
  2. Combine the brown sugar, sugar, cinnamon, salt and water either in a pot or the liner of your Instant Pot.
  3. Stir in the apples.
  4. For the Instant Pot: Cook on manual HIGH for 0 minutes, Quick release the pressure. Then turn the pot onto sauté.
  5. For the stovetop: Simmer the mixture for 10-15 minutes or until fork tender.
  6. Remove about 1/2 cup of liquid from the pot and whisk in 1/4 cup of cornstarch.
  7. Pour the cornstarch slurry into the pot with the apples and stir until the sauce has thickened.
  8. Use right away, refrigerate for 5 days or freeze until needed!

  1. I have no idea what happened, followed recipe exactly and dough ended shaped like muffins not crusts 🙁

  2. Hi Eden, did you accidentally use baking soda instead of baking powder? It sounds like that might have happened or something must have been off while measuring. Sorry to hear they didn’t work out for you this time!

  3. How do you cook the apples for 0 minutes? I want to try this but don’t want to start and waste time and have to switch to the stovetop. Thanks!

  4. Hi Roberta! You’ll just set the Instant Pot down to 0. This just means that the Instant Pot will come to pressure but won’t be held at pressure for any time before it beeps indicating the time is up. Hope this helps!
