Fresh Strawberry and Cream Pie Recipe is the perfect for Summer!

This recipe is the first in a series of Pie recipes that I will be posting. Hope you like pie as much as I do!

My church is having a huge summer party tomorrow and I, honestly, am so excited I think I might have a hard time sleeping tonight.

If you’ve ever wondered what it would be like living in the country, this party will sum it up nicely for you. This is what will be going down: Pie eating contest, pie judging contest, two person log sawing contest, onion sack races, a goldfish grab AAAAAAND..

all of the kids get tossed into a circle with a greased pig on the loose, the first kid to catch the pig gets to take it home!

Anyway, THE PIE. I, of course, went crazy and made 5 pies. This is just the lucky winner that gets it’s post first. Be on the lookout for an apple pie, peanut butter pie, cookies and cream pie, and banana cream pie posts to come shortly!

This Strawberries and Cream Pie is so fresh and fruity, PERFECT for summer!

Fresh strawberries and a creamy filling on top of the crust is an easy pie recipe.

How to make a Strawberries and Cream Pie

First, lets talk about the crust. For this pie I love making a homemade sugar cookie crust. The crust is chewy, super sweet and vanilla-y. Find all of the details for the sugar cookie crust here.

Any crust would work for this pie though, buy a pre-made graham cracker crust at the store or make your own! I definitely recommend the sugar cookie crust over a graham cracker crust if you’ve got a choice. ?

Now on to the super easy pie filling. Start by washing and slicing ripe strawberries.

St those aside for a little bit while we make the creamy white filling.

To make the creamy white filling, you’ll essentially be combining vanilla buttercream with cool whip. Butter, vanilla, milk and powdered sugar and whipped together until well combined. Just dump everything into the stand mixer and let it do the work!

Once everything is mixed nicely, fold in half of a container of cool whip.

Before assembling the pie, make sure that the crust is room temperature.

To assemble, start with a little under half of the creamy filling and spread it on the bottom of the pie crust.

This simple pie has an easy layering of fresh strawberries and creamy filling.

Top the creamy filling with half of the sliced strawberries.

Spread the remaining creamy filling onto the sliced strawberries and, again, top the creamy filling with the remaining sliced strawberries.

Layering the pie and it gets assembled.

Spread the rest of the cool whip onto the top of the pie and garnish with a few whole strawberries.

Ingredients

  • 1 pie crust, I recommend checking out my sugar cookie pie crust!
  • 1 lb fresh strawberries
  • 1/4 cup butter
  • 1 1/2 cup powdered sugar
  • 1 1/2 tbsp milk
  • 1 tsp vanilla
  • 1 8 oz tub cool whip or 8 oz fresh whipped cream!

Instructions

  1. Wash, hull and slice the strawberries. Set aside. Reserve 1 for garnish if desired.
  2. Cream the butter, powdered sugar, milk and vanilla until well combined and smooth.
  3. Fold in 4 oz (or half) of the cool whip.
  4. To assemble the pie, spread a little less than half of the creamy filling onto the bottom of the pie crust.
  5. Top with half of the fresh strawberries.
  6. Spread the remaining creamy filing onto the strawberries.
  7. Top the creamy filling, once again, with the fresh strawberries.
  8. Spread the remaining cool whip on top of the strawberries and garnish with the reserved strawberry if desired.
  9. Store in the refrigerator. Enjoy!
