Chicken Fajitas are the Perfect Weeknight Meal
You know what happens to me WAY too often? Dinner time rolls around and I have NO plans for dinner.
I know, I cook and photograph food all day, every day and still can’t manage to get an actual dinner put together most nights.
But, you know what? I officially have my new I-haven’t-planned-dinner-but-everyone-is-hungry meal.
No more scrambled eggs and toast 3 nights per week. Lately, thats not even an exaggeration, people.
Enter: Chicken Fajitas. Literally 2 minutes under pressure. There is a good dose of protein in there and no pasta for once. We tend to eat a lot of Alfredo and ziti around these parts. ?
Side note: Does anyone else get sucked into lame romance movies on Netflix and amazon? Currently watching/listening to one that has completely awful acting but I can’t seem to stop watching. I just have to see the guy get the girl, ya know? AKA this post is taking way longer to write than usual because of this nonsense.
Anyway, fajitas. I could eat these for dinner, breakfast, lunch and dinner again. Maybe I did, maybe I didn’t. ?
How to Make Instant Pot Chicken Fajitas
Making Chicken Fajitas in the Instant Pot is stupidly easy. The first thing you’ll need to do is slice the chicken into thin strips. My strips were approx 1 1/2 inches long, 1 inch wide and a little less than 1/2 inch thick.
the chicken strips, water and an Au Jus seasoning packet goes into the Instant Pot. Pressure Cook for 2 minutes, allow for 5 minute NPR.
Discard the liquid in the Instant Pot, reserving about a tablespoon or two.
Turn the Instant Pot onto the sauce function.
Add a ranch packet, Italian dressing packet and chili powder to the Instant Pot. Toss the peppers and onions in. Stir to coat the chicken and veggies in the seasonings.
Cover with a lid, and sauté until the veggies are cooked to your liking. I come back and stir everything every minute or so to make sure things don’t burn.
Sometimes the veggies let of enough liquid that I don’t need to use the reserved liquid, but sometimes I toss it in at the end to get all of that seasoning off of the bottom of the Instant Pot.
Enjoy served with some Pico De Gallo, guac, cilantro, sour cream (which my daughter would eat by the spoonful if ‘ let her!) and of course, cheese.

- 2 chicken breasts thinly sliced
- 1 cup water
- 1 pkg au jus seasoning
- 1 pkg ranch dressing mix
- 1 pkg Italian dressing mix
- 1/2 tsp chili powder
- 2 bell peppers sliced
- 1/2 red onion sliced
Instructions
- Add the water and au jus seasoning mix to the liner of the Instant Pot. Stir to combine. Add in the thinly sliced chicken breast.
- Lock the lid, set the knob to sealing. Cook on Manual HIGH for 2 minutes. Allow for a 5 minute NPR then quick release the remaining pressure.
- Discard the liquid in the Instant Pot, reserving about 2 tbsp.
- Turn the Instant Pot on to Sauté. Add the ranch dressing mix, Italian dressing mix and chili powder to the Instant Pot.
- Add in the peppers and onions.
- Stir to coat the meat, peppers and onions in the seasonings. Continue to sauté until the peppers and onions are cooked to your liking. You may need to add in the reserved liquid in this step if the veggies don’t let off a lot of liquid. It really is up to personal preference.
- Enjoy wrapped in a warm tortilla with cheese, sour cream, guacamole, cilantro.. really anything you’d like!

I think I will try this, BUT without all of the seasoning packets. Way too salty for me. I think I will just use my own seasonings and a pinch of salt. We love fajitas, and I usually cook them in my wok, but this sounds easy, good and a lot less effort! Thanks.
