Cookies ‘n Cream Granola Bars are something I would have never even thought to buy or make before marrying Dan. He loves Oreos and ANYTHING Cookies ‘n Cream flavor. I really wasn’t too much of a fan but I have been converted to the Oreo life. Most nights after my kids go to bed you can find me in my PJ’s, typing up posts (like now!) with a couple of Oreos and a jar of peanut butter. Nothing is better than Oreos and peanut butter. Mmmmm.Cookies 'n Cream Granola Bars are your basic granola bar but it is packed with chunks of chocolate Oreo Cookies. This is not your average granola bar!

I will be the first to admit, these are not any sort of healthy, but they are dang tasty and make a mighty fine treat every once in a while!  My kids love helping me smash the Oreo cookies, it is such a fun way to get the kids involved in the kitchen!

Now for the nitty gritty. There are no baking involved with these granola bars. It is all done on the stove top and then just left to cool!  You will want to boil the mixture for about 30 seconds, but that is it. Any longer and you will end up with really hard granola bars, not soft and chewy and soft and chewy are way better. Start to finish, this recipe only takes about 10 minutes! The cooling time is what seems to take forever. I’ll admit, I usually never last too long before I dig in. Cookies 'n Cream Granola Bars are your basic granola bar but it is packed with chunks of chocolate Oreo Cookies. This is not your average granola bar!

Cookies ‘n Cream Granola Bars

Cookies ‘n Cream Granola Bars are your basic granola bar but it is packed with chunks of chocolate Oreo Cookies. This is not your average granola bar!

 Ingredients

  • 1/2 cup brown sugar
  • 1/4 cup corn syrup
  • 2 tbsp butter
  • 1 tsp vanilla
  • 1 1/2 cup quick oats
  • 1 1/4 cup krispy rice cereal
  • 15 Oreo cookies crushed

Instructions

  1. Crush the Oreo cookies in a baggie. Get out all that pent up anger. ? Measure out and combine the oats, cereal and Oreo cookies. Set aside.

  2. In a small sauce pan, over medium high heat, combine the brown sugar, corn syrup and butter. Bring to a boil and let the liquid boil for 30 seconds, NO longer or your granola bars will be hard.

  3. Remove from heat and stir in vanilla. Pour over the dry ingredients and quickly stir to combine.

  4. Press into a greased 8×8 pan. I like to spray the back of a small glass dish and use that to really press the granola into the pan. You will want to pack it tightly.

  5. Let them cool completely (or as long as you can stand it!) and then remove them from the pan and then cut into bars. Store them in an airtight container for 3-4 days.
