If I had a favorite cookie (ALL cookies are good) the Chocolate Cookie might just take the cake. Back when I worked at Subway, I’m pretty sure I could have eaten all of the chocolate and raspberry cheesecake cookies out of the case.

I am just a chocolate girl through and through. I can’t get enough of it. Yes, I am guilty of sneaking handfuls of chocolate chips when my kid’s aren’t in hearing rang.

Chocolate Cookies are not only full of chocolate, but they are so chewy and so soft. Honestly, I feel like I am eating a brownie but in cookie form.

For this recipe I used milk and semi sweet chocolate chips. These would be amazing with some white chocolate chips too.

Sometimes I even sandwich ice cream between two cookies. Yup, it’s basically heaven.

Tips for making the best Chocolate Cookie

  • The recipe calls for both butter and shortening. Yes, just using butter will work, but the shortening gives the outer edges a little crisp to them which is just plain tasty.
  • Cream the sugar with the butter/shortening for the full 3 minutes. Set a timer!
  • Don’t overmix the dry ingredients, that will create a cakey cookie. We want a chewy cookie. ?
  • Use a variety of chocolate chips! I like to use milk, semi sweet and then mini chocolate chips! The mini chocolate chips are a must in my book. It distributes the chocolate so well!
  • You’ll want to pull these out of the oven when they are a little under-baked! Leaving them on the hot pan to cool, they will continue to bake as they cool down.

Ingredients

  • 1/2 cup butter
  • 1/4 cup shortening
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 2 tsp vanilla
  • 1 1/2 cup flour
  • 1/2 cup cocoa
  • 2 tsp corn starch
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups assorted chocolate chips

Instructions

  1. Preheat the oven to 350°.
  2. In the bowl of a stand mixer, combine the butter, shortening and sugars. Mix on high speed for 3 minutes.
  3. Scrape down the sides and then add in the egg and vanilla. Mix well.
  4. Add the dry ingredients (flour, cocoa, corn starch, baking soda, and salt)  to the bowl and slowly mix until just combined. Do not over mix.
  5. Fold in the chocolate chips. (I like to use mini chocolate chips, and regular sized milk chocolate chips!)
  6. Scoop the dough into balls and place on a cookie sheet that is lined with parchment paper. Flatten cookies a bit with your fingers.
  7. Bake at 350° for 8-10 minutes or until no longer glossy on the top.
  8. Take out of the oven and let the cookies cool on the pan for 5 minutes before transferring to a wire rack.
