Chicken Stroganoff Recipe

Introducing this week’s installment of my rotisserie chicken meal series: easy chicken stroganoff. 

Chicken stroganoff is creamy and hearty! Every time I’ve made it, my entire family has asked for seconds, which is a huge win in my book. I love that you can get this stroganoff on the table in 30 minute without sacrificing flavor. Take one bite and I promise you’ll be hooked!

What Ingredients are in Chicken Stroganoff?

  • Butter
  • Small onion, sliced thinly  – We love onions in my house, but I know that’s not the case for everyone. Feel free to omit or sub with mushrooms! 
  • Diced cooked chicken – I use rotisserie chicken because it makes this meal SO EASY. But you can use any type of cooked chicken. 
  • Flour – The flour is added and cooked before adding the liquid to create a roux that will thicken the sauce.
  • Beef broth
  • Sour cream – You can sub this for cream cheese if you’d like. It will create a thicker sauce, but will still be delicious. 
  • Garlic
  • Salt and pepper – When it comes to seasoning this dish, tasting is your friend! Taste and season until you have it how you like it! 
  • Egg noodles

How to Make this Chicken Stroganoff Recipe

  1. Add the butter and sliced onion to a large skillet over medium high heat.
  2. Cook until the onions are translucent and starting to brown.
  3. Add the diced chicken and cook for 1-2 mintues.
  4. Add the flour and stir until other ingredients are coated.
  5. Slowly add in the beef broth, stirring and simmering until thickened.
  6. Turn down the heat to low and stir in the sour cream, garlic powder and season with salt and pepper to taste.
  7. Serve over egg noodles. Enjoy!

What are the best side dishes to serve with chicken stroganoff?

My favorite thing to serve with this dish is a big green salad. But I also love serving this with a side of peas and a fresh fruit like strawberries, sliced apples or grapes.

Can I make chicken stroganoff ahead of time and reheat it later?

Absolutely! This dish reheats SO well. You can reheat on the stove or in the microwave – whichever you prefer!

Chicken Stroganoff

Ingredients 

  • 2 tbsp butter
  • 1/2 small onion, sliced thinly
  • 2 cups diced chicken, cooked
  • 3 tbsp flour
  • 16 oz beef broth
  • 1/2 cup sour cream
  • 1/2 tsp garlic
  • salt & pepper to taste

Instructions 

  • Add the butter and sliced onion to a large skillet over medium high heat.
  • Cook until the onions are translucent and starting to brown.
  • Add the diced chicken and cook for 1-2 mintues.
  • Add the flour and stir until coated.
  • Slowly add in the beef broth, stirring and simmering until thickened.
  • Turn down the heat to low and stir in the sour cream, garlic powder and season with salt and pepper to taste.
  • Serve over egg noodles. Enjoy!
