Salted Caramel Sugar Cookies are super rich and dense cookies that are served cold. The sugar cookie is soft and flavorful topped with a caramel buttercream, caramel drizzle and a sprinkle of Sea Salt.

Salted Caramel Sugar Cookies- better than Twisted Sugar & Swig!

I am not sure if this is just a Utah thing or an all over thing, but over the past 5 or so years Soda drink shops have become extremely popular here!

It seems like there is a different one every block or so (all you east-coasters, they are like Dunkin Donuts out there ?). There is Swig, Sodalicious, Fiiz, Sips, Soda Factory, Sodacrazy.. I could keep going but you get the point!

There are approximately a ZILLION of them.

Now, you don’t go to just get a sprite or DP. These are specialty sodas. Yes, there is such a thing. ?

Dirty Diet Cokes are suuuper popular around these parts (Diet Coke with coconut syrup & lime) but my personal favorite is the Lime Rickey (Sprite with grape syrup and lime).

Along with all of the crazy Sodas are treats.

Specifically Sugar Cookies.

Served COLD. 

Yes, it is a thing and it is TO DIE FOR. You have got to try it out!!

Recently a friend gave me a cold Salted Caramel Sugar Cookie and I thought I had died and gone to heaven.

So, naturally, I made my own version. Which I think is ever bit as good. ?

How to make Salted Caramel Sugar Cookies

To make the sugar cookie, first cream together equal parts sugar and butter.

Add in an egg and some vanilla.

Beat in the egg extremely well. Scrape sides of bowl if needed. Mix until creamy.

Add in the dry ingredients. The dry ingredients are flour, baking powder and corn starch.

Using a cookie scoop, line up equal sized cookie dough balls on a silicone (or parchment paper!) lined pan.

To get that iconic rough edge, take the bottom of a drinking glass and dip it in sugar (you may need to spray the bottom of the glass lightly with non-stick spray the first time) and then gently flatten the cookie dough.

Repeat with all of the dough. Bake at 350° for 7-8 minutes.

Pull them out of the oven when the tops are no longer glossy. Don’t wait until they start turning brown!

Let the cookies cool on the pan for 10 minutes and then transfer to a wire rack.

To make the Caramel Frosting, mix together butter, powdered sugar, vanilla and a splash of milk. This is my basic Sugar Cookie Frosting.

Then incorporate some Caramel Topping. *wiping up my drool!*

I use Smucker’s Hot Caramel Topping (not heated up though, just cold ?). I like it because it is thick and will not ruin the consistency of the frosting.

Incorporate the caramel into the frosting extremely well. I used 1 tbsp of caramel and the frosting has a hint of caramel, but definitely not overpowering. I would suggest adding 1 tbsp, taste testing and then adding a bit more if needed.

Once the cookies have cooled completely, frost generously!

Drizzle with some extra caramel (I like to do this by using a zip top bag and clipping the corner slightly) and sprinkle with some sea salt. YUM!

Store in the refrigerator and serve cold.

Sugar Cookie

  • 1/2cup butter softened
  • 1/2cup sugar
  • 1egg
  • 3/4tsp vanilla
  • 1 1/2cups flour
  • 1tsp baking powder
  • 1tsp corn starch

Caramel Frosting

  • 1/4cup butter
  • 1/12cup powdered sugar
  • 1tsp vanilla
  • 1tbsp milk
  • 1-2tbsp caramel topping
  •  
  • extra caramel topping for drizzle
  • Sea Salt

Instructions

  1. Preheat oven to 350°.
  2. Cream together the butter and sugar.
  3. Add in the egg and vanilla. Mix well.
  4. Add in the flour, baking powder and corn starch.
  5. Scoop the dough out onto a silicone or parchment paper lined cookie sheet.
  6. Use the bottom of a drinking glass dipped in sugar to press the cookie dough balls flat. (I give more details on this step in the post above.?)
  7. Bake at 350° for 7-8 minutes or until the tops are no longer glossy.
  8. Let the cookies cool for 10 minutes on the pan before transferring to a wire rack.
  9. To make the frosting, combine all ingredients and mix until well combined.
  10. Frost each cooled cookie, drizzle with caramel and sprinkle with sea salt.
  11. Store in the refrigerator and serve cold.
