Peanut Butter Bird’s Nest Cookies are such a fun Easter Dessert!! They are super kid friendly, and actually taste good!! I’m looking at you Chow Mein Noodles!
Don’t get me wrong, Chow Mein noodles have their place. That place is on top of my Hawaiian Haystack, not in a dessert. 😉
Make these Bird’s Nest Cookies from start to finish in about 15 or so minutes to make this one of the quickest Easter Festive Desserts around!

How to make Peanut Butter Bird’s Nest Cookies
To start, measure out equal parts corn syrup, sugar and peanut butter (1 cup of each).
In a medium saucepan, bring the sugar and corn syrup to a boil. As soon as it starts boiling, remove from heat and stir in the peanut butter until smooth. If you’d like to add a splash of vanilla, now is the time! I loooove vanilla, so it always goes into mine!
Pour the mixture over 5 cups of cornflakes. Quickly and gently stir until the cornflakes are covered.
Either scoop or spoon out the cornflake mixture onto parchment paper. Use the back of a spoon to help shape the cookies into ‘nest’s’ with a divot in the middle.
Drizzle melted chocolate in both directions over the cookie and then top with a few egg shaped Peanut Butter M&M’s.
How to store Bird’s Nest Cookies
The best way to store your finished Bird’s Nest Cookies is in an air tight container. They will stay good at room temperature for 2 days. If stored in the fridge they will stay fresh for up to 1 week.
Make Bird’s Nest Cookies without Cornflakes
If you don’t want to use cornflakes, be my guest! Here are a list of alternatives you could use. Substitute 5 cups of any one or a combination of alternatives.
- Chow Mein Noodles
- Pretzels
- Rice Krispies
- Chex
- Coconut
- Crushed Potato Chips

Peanut Butter Nest Cookies
Ingredients
- 1 cup sugar
- 1 cup light corn syrup
- 1 cup creamy peanut butter
- 1 tsp vanilla
- 5 cups cornflakes
- 1/2 cup chocolate chips
- 1 bag egg shaped peanut butter M&M's
Instructions
- In a medium sauce pan bring the sugar and light corn syrup to a boil over medium high heat.
- As soon as the mixture begins to boil, remove from heat and stir in the peanut butter and vanilla until smooth.
- Pour over the measured out cornflakes and stir to evenly coat.
- Scoop the cornflake cookies out and place them on parchment paper. Shape into a nest either using your fingers (careful! It may be hot!) or the back of a spoon.
- Repeat with the remaining cornflake mix.
- In a microwave safe bowl, melt the chocolate chips by microwaving for 30 second intervals, stirring in between each one, until completely smooth.
- Spoon the melted chocolate into a piping bag or freezer zip top bag. Snip the corner so there is a very small hole.
- Drizzle the melted chocolate over the cookies in both directions.
- Place 2 or 3 egg shaped peanut butter M&M's into each nest.
- Allow to cool on the counter until the chocolate is set, or toss them in the fridge if you are in a hurry.
- Enjoy!
