This easy recipe for Lasagna Soup is the perfect quick meal!

Lasagna soup is one of my very favoirte family dinners. It is hearty and savory, without being too heavy. It maintains all the homestyle flavor and charm of regular lasagna, but is a fraction of the work and time. From start to finish, this easy lasagna soup only takes 30 minutes and is extremely versatile with lots of options to customize according to your family and their tastes.

Easy Lasagna Soup Ingredients

Soup 

  • Oil – I use olive oil, but you can use vegetable oil or even butter. 
  • Minced onion
  • Minced garlic 
  • Chicken broth 
  • Dried basil – Feel free to use whatever quantity of these seasonings that you like! Customize it to what your family likes. 
  • Dried parsley
  • Dried oregano 
  • Jar of marinara sauce – Use whatever brand you like. I typically just use storebrand! 
  • Tomato paste
  • Lasagna noodles, broken into pieces – You don’t have to use lasagna noodles here – you can use any noodles you’d like. 
  • Cooked ground beef – Feel free to omit and add in cooked sausage instead (or add both)! 
  • Heavy whipping cream – You can sub half & half, your soup just won’t be as thick and may need a little cornstarch. 
  • Salt and pepper, to taste

Cheese Topping 

  • Ricotta cheese or cottage cheese
  • Fresh parmesan cheese

How to make Lasagna Soup

  1. If your ground beef is not cooked, brown ground beef on the stovetop first and set aside.
  2. In a large pot, add your oil, minced onion and garlic. Stir over medium heat until fragrant.
  3. Add the chicken broth, seasonings (basil, parsley, oregano), marinara sauce and tomato paste. Stir until smooth.
  4. Cover the pot and allow the mixture to come to a boil.
  5. Once boiling, add in the broken lasagna noodles. Simmer until the noodles are cooked al dente.
  6. Once the noodles are cooked, reduce the heat to low, and stir in the cooked ground beef.
  7. Stir in the heavy whipping cream and season with salt and pepper to taste.
  8. For the cheese topping, combine the cottage cheese or ricotta cheese with the parmesan cheese.
  9. Serve the soup and top with the cheese topping. Enjoy!

 Lasagna Soup Recipe Easy Variations

I love this easy lasagna soup recipe because you just can’t go wrong! Season this how you love (adding more or less of any seasonings as you please), add in some sausage instead of or in addition to the ground beef, use different types of noodles, use fresh herbs instead of dried, it doesn’t matter! Go to town and make this your own. I promise it’s going to be delicious!

How to serve the Best Lasagna Soup

I serve this up in a big bowl with a hearty dose of the cheese topping. On the side, I usually add a crusty bread and a nice crisp green salad.

How to store this Easy Lasagna Soup Recipe

Let your soup cool and store in an airtight container in the fridge for up to 3 days. I typically store the soup and cheese topping in separate containers, but you could store  them together if needed.

Can this recipe for Lasagna Soup be frozen?

Yes! Simply place your leftover soup in a freezer-proof container and store for up to 2 months. When you’re ready to serve, reheat in a pot on the stove and serve warm!

How to reheat the Best Lasagna Soup Recipe

From the fridge I typically just reheat this in individual bowls in the microwave. If you’re looking to reheat for your whole family, you can also pop this back in a pot and warm over medium heat on the stove until warm. If heating from frozen, reheat in a pot on the stove.

Best Lasagna Soup

Ingredients 

  • 1 tbsp oil
  • 1/4 cup minced onion
  • 1 tsp minced garlic
  • 6 cups chicken broth
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • 1/2 tsp dried oregano
  • 24 oz jar marinara sauce
  • 1 can tomato paste
  • 9 lasagna noodles, broken into pieces
  • 2 cups cooked ground beef
  • 1/2 cup heavy whipping cream
  • salt & pepper to taste

Cheese Topping

  • 1 cup ricotta cheese or cottage cheese
  • 1/2 – 3/4 cup fresh parmesan cheese
