Best Lasagna Soup

This easy recipe for Lasagna Soup is the perfect, everyone in your family will eat it, weeknight or Sunday dinner meal.

Ingredients

  • 1 tbsp oil
  • 1/4 cup minced onion
  • 1 tsp minced garlic
  • 6 cups chicken broth
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • 1/2 tsp dried oregano
  • 24 oz jar marinara sauce
  • 1 can tomato paste
  • 9 lasagna noodles, broken into pieces
  • 2 cups cooked ground beef
  • 1/2 cup heavy whipping cream
  • salt & pepper to taste

Cheese Topping

  • 1 cup ricotta cheese or cottage cheese
  • 1/2 - 3/4 cup fresh parmesan cheese

Instructions

  • If your ground beef is not cooked, brown it on the stovetop first and set aside.
  • In a large pot, add your oil, minced onion and garlic. Stir over medium heat until fragrant.
  • Add the chicken broth, seasonings (basil, parsley, oregano), marinara sauce and tomato paste. Stir until smooth.
  • Cover the pot and allow the mixture to come to a boil.
  • Once boiling, add int he broken lasagna noodles. Simmer until the noodles are cooked al dente.
  • Once the noodles are cooked, reduce the heat to low, and stir in the cooked ground beef.
  • Stir in the heavy whipping cream and season with salt and pepper to taste.
  • For the cheese topping, combine the cottage cheese or ricotta cheese with the parmesan cheese.
  • Serve the soup and top with the cheese topping. Enjoy!
