If your ground beef is not cooked, brown it on the stovetop first and set aside.
In a large pot, add your oil, minced onion and garlic. Stir over medium heat until fragrant.
Add the chicken broth, seasonings (basil, parsley, oregano), marinara sauce and tomato paste. Stir until smooth.
Cover the pot and allow the mixture to come to a boil.
Once boiling, add int he broken lasagna noodles. Simmer until the noodles are cooked al dente.
Once the noodles are cooked, reduce the heat to low, and stir in the cooked ground beef.
Stir in the heavy whipping cream and season with salt and pepper to taste.
For the cheese topping, combine the cottage cheese or ricotta cheese with the parmesan cheese.
Serve the soup and top with the cheese topping. Enjoy!
