Classic Instant Pot Recipe- Quick & Easy Weeknight meal

Last night I went completely out of my comfort zone and taught an Instant Pot class to a group of women at church.

Random question: Does it surprise you that teaching that class was out of my comfort zone? I’m much more comfortable behind the screen here. ? In person, I’m a little awkward with a side of weird. But aren’t we all?

Anyway, the class was about an hour long, we had 3 Instant Pot’s going and made Ziti, Creamy Salsa Chicken and hardboiled eggs. I had cheesecake and yogurt for them to sample, too!

Everyone left with a lot of information and quite a few now have an Instant Pot on their Christmas list. So, mission accomplished, right? ?

The one thing that most were impressed with was the fact that an entire meal could be made in the Instant Pot all at once! Just like this recipe.

Fall apart, melt in your mouth chicken, silky gravy and mashed potatoes all made in the same pot.

Totaling 30 minutes.

Boom, mic drop. ?

Instant Pot Accessories

For this recipe, you’ll obviously need an Instant Pot. If you don’t have one yet, check out my review and why the Instant Pot changed my life and how I know it will change yours!!

Put it on your Christmas list, you will not be disappointed, I promise! Ps. Make sure to keep an eye out on Black Friday!

Another very useful accessory for this recipe is a steamer basket. I have this stainless steel one, but there are many different options on Amazon. I’ve seen silicone ones, which might actually be better for this recipe since it is pliable unlike the stainless steel steamer basket.

The potatoes cook in the steamer basket so once they are cooked it is easy to remove all of the potatoes at once and mash them.

How to make Chicken, Mashed Potatoes and Gravy in the Instant Pot

First, broth, Worcestershire sauce, soy sauce and some seasonings go into the liner of the Instant Pot.

Frozen chicken tenders go into the broth.

Next, peel and dice your potatoes! Place the potatoes into the steamer basket. Place the steamer basket on top of the chicken tenders.

Cook on manual HIGH for 6 minutes. Allow for a 6 minute NPR before releasing the pressure manually.

Remove and transfer the potatoes into a large bowl. Add some butter and milk then mash those taters!

Season with salt and pepper to your liking.

Remove the chicken tenders and turn the Instant Pot onto saute.

Make a cornstarch and water slurry and thicken the gravy.

Now you are ready to serve!

Frequently Asked Questions

Can I use Chicken Breasts instead of Chicken Tenders?

If you would like to use chicken breasts, I would suggest using thawed breasts and then cutting them in half prior to cooking.

Can I use thawed Chicken Tenders instead of Frozen?

Yes, Just dice those potatoes smaller and cook on manual HIGH for 4 minutes, NPR 6 minutes.

Can I double this recipe?

Definitely! Cook time will stay the same.

I don’t have a steamer basket.. can I still make this?

Yes! You can toss the potatoes right into the broth with the chicken and then use a slotted spoon to remove the potatoes after they cook so they can be mashed.

Instant Pot Chicken and Mashed Potatoes with Gravy

Instant Pot Chicken and Mashed Potatoes with gravy are all made in the same pot, at the same time in under 30 minutes!! Your family’s favorite meal just got a lot easier and quicker!

Ingredients

  • 2 1/2 cups chicken broth
  • 1 tsp Worcestershire sauce
  • 1 tsp soy sauce
  • 1/2 tsp minced garlic dried
  • 1/2 tsp minced onion dried
  • 1 tsp parsley dried
  • salt and pepper to taste
  • 6 frozen chicken tenders
  • 4 medium potatoes peeled and diced
  • 1 tbsp cornstarch
  • 1/4 cup water

Instructions

  1. Pour the chicken broth, Worcestershire sauce, soy sauce, garlic, onion, and parsley into the Instant Pot liner.
  2. Add the chicken tenders to the pot.
  3. Peel and dice the potatoes and place in a steamer basket.
  4. Place the steamer basket on top of the chicken in the Instant Pot.
  5. Cook on manual HIGH for 6 minutes, allow for a 6 minute NPR.
  6. Remove the potatoes from the Instant Pot and mash the potatoes. I like to add 2 tbsp of butter and 1/4 cup of milk to the potatoes as I mash them. Then I season with salt and pepper.
  7. Remove the chicken from the Instant Pot and set aside.
  8. Turn the Instant Pot onto saute. Create the cornstarch slurry with the cornstarch and water.
  9. Once the gravy is boiling, SLOWLY add the cornstarch slurry. Add only until the gravy is thickened to your liking. You may have some left over or you might not have quite enough, it just depends on how thick you like your gravy!
  10. Serve hot!

    Thank you so much for this recipe. This is the first time I have used my instant pot. I have the duo mini 3 qt one. I just followed the directions and used the same amount of ingredients and it just barely fit under the 2/3 line on the inner pot. I REEEAALLLYY appreciated you including the FAQ in the article above the recipe because it answered all the questions I had. Like I said, I am just using the instant pot now and do not have the steamer basket, so I really appreciated you including those tidbits in there. Thank you for dinner! I can’t wait to see how it turns out. It smells delicious already!

    Absolutely delicious. Just made it for dinner, used better than bullion and water instead of broth, but it was so good. Now I’m going to head into a food coma! In fact as soon as I finished I shared the recipe with the IP group I’m in!

  4. I’m new to IP cooking. When you said to “Cook on manual HIGH for 6 minutes, allow for a 6 minute NPR” does this mean to use the ‘Pressure Cooking’ selection and set for only 6 minutes? What do I do with the pressure release valve? I’ve already started the machine so I hope I don’t screw up our dinner or blow something to smithereens!!

  5. You’ve got this! You’ve set it to pressure cook for 6 minutes, which is correct! Once the cooking cycle has finished you’ll wait until the timer counts UP to 6 (that’s the 6 min NPR) and then turn the knob. Hope this helps!

  6. I forgot to add to my last comment, the Nova Plus Instant Pot that I have only has two settings for the venting… 1) SEALING or 2) VENTING. Which one do I use for this recipe? Like I said, I already started it for dinner and it’s on VENTING because I have no idea what to do!

  7. You’ll set it to sealing for the whole time until you need to release the pressure (after the 6 min NPR) and then you will turn it to vent. ?

    Tastes like Sunday. Wow. This is a really good recipe for a weeknight. The chicken was juicy and the potatoes were perfect for mashed potatoes. I used fresh chicken breasts and followed the advice in the FAQs and pressure cooked on high for 4 mins with a 6 min natural release wait. I’m going to be looking for more recipes like this.
