I have recently decided I need a second Instant Pot for sides! I don’t get the chance to make too many sides in my Instant Pot because, well, the main dish is always in there.

I feel now would be the time to apologize to my crockpot.. I literally have not used it since I got my Instant Pot.

Well, the other day I went out of my way to make these Cheesy Potatoes in the Instant Pot. I needed them for dinner, but I made them at about 10:00 am. I put them in the fridge and then popped them into the oven to heat through right before dinner.

It actually worked out really well! Buuuuuut, after making these potatoes in the Instant Pot, I am convinced that I need a Instant Pot Mini for sides.

Making the Perfect Cheesy Potatoes in the Instant Pot

First the potatoes will need to be washed, peeled and diced. I always dice mine into about 1 inch cubes. It is important to dice the potatoes to about that size to insure that they will be cooked through in the Instant Pot.

The diced potatoes go into the Instant Pot along with one cup of water, salt and pepper. The potatoes are pressure cooked on Manual HIGH for 2 minutes. Quick release the pressure when the potatoes have finished pressure cooking.

Drain any remaining liquid and then return the potatoes to the Instant Pot. Add in some butter and get mashing!

I always mash with my whisk because, well, I don’t own a potato masher currently (lost in the move) and I like the way the whisk mashes the potatoes!

To insure your potatoes don’t end up like glue, it is important to not over mix the potatoes. Using electric beaters tend to create glue potatoes. I would definitely recommend mashing by hand.

After the potatoes and butter have been mashed, add a splash of milk and a spoonful of sour cream. Season with salt and pepper to taste and then add in the cheese!

You can really get creative with the cheese, here! For the photos, I just used pre-shredded cheddar cheese. Many different types of cheese would be delicious in the mashed potatoes though!

Parmesan cheese, Swiss cheese, sharp cheddar, or pepper-jack could even be good! The cheese is definitely where you can customize this dish to your liking.

Stir the cheese throughout the mashed potatoes, eat a spoonful and season a bit more if needed.

You could totally stop right now and serve these potatoes! I like cheese probably a little too much so I like to transfer the potatoes to a baking dish and add more cheese.

I spread the mashed potatoes into the bottom of an oven safe dish and then cover the top with more shredded cheese.

Pop the dish into the oven and broil until melty, bubbly and drool inducing.

Ingredients

  • 4 medium russet potatoes washed, peeled & diced
  • 1 cup water
  • 1/3 cup butter
  • 3 tbsp milk
  • 2 tbsp sour cream
  • salt and pepper to taste
  • 1 cup shredded cheddar cheese divided

Instructions

  1. Take the washed, peeled and diced (into 1 inch cubes) and place them in the Instant Pot along with the water.
  2. Lock the lid into place, make sure the knob is set to sealing and then pressure cook on Manual HIGH for 2 minutes and then quick release the pressure.
  3. Drain any liquid that is left.
  4. Add the butter to the potatoes and roughly mash by hand until the butter has been incorporated.
  5. Add in the milk and sour cream and finish mashing the potatoes. Do not over mash!
  6. Season with salt and pepper. I didn’t write a specific measurement because this is something that varies so much person to person. I suggest seasoning, tasting, seasoning, tasting etc until it is seasoned to your liking.
  7. Stir in 1/2 cup of the shredded cheese and then transfer to an oven safe dish.
  8. Top the potatoes with the remaining cheese. Broil in the oven until the cheese has melted.

    I put a parmersan crust in it and boi was this a hit… sooo good… my picky eater family loved it.
