Instant Pot BBQ Crack Chicken Sandwiches.. You know when you take something good and add another little something that is good to it and the outcome is AMAZING? Like that time this past Saturday (good #1) the stars aligned and my kids decided play nicely together (good #2) and let me sleep in until 8:00 AM (AMAZING!!)? Yes, just like that these BBQ Crack sandwiches are.
The creaminess of the cream cheese paired with the BBQ sauce alone is enough to make me weak in the knees. Adding in the powdered ranch mix, cheese and bacon? Yup, I’m done for. Sign me up to eat the entire pot full!
The Instant Pot makes these sandwiches SO easy. The chicken cooks for 5 minutes in bbq sauce, NPR for 5 minutes and then 5 minutes resting time before you shred. 5-5-5 is all you need to remember when it comes to cooking chicken breasts! Perfect every time!
I fry up the bacon while the chicken is cooking. That way everything can be tossed together as soon as the chicken is shredded. After the chicken is shredded, the cream cheese, powdered ranch, bacon bits and shredded cheese are mixed in to make the creamiest, cheesiest sandwich ever.

Ingredients
- 1 chicken breast
- 1/2 cup chicken broth
- 1/2 cup BBQ sauce
- 1/8 cup brown sugar
- 1//4 cup cream cheese
- 1/4 cup shredded colby jack cheese
- 1 tbsp dry ranch dressing mix
- 1/2 lb bacon cooked, crumbled
Instructions
- Combine the chicken broth, BBQ sauce, and brown sugar in the liner of your Instant Pot. Place chicken breast (1 inch in thickness) in the liquid and pressure cook on manual HIGH for 5 minutes. NPR for 5 minutes and then allow to rest 5 additional minutes before shredding.
- Shred the chicken. Remove liquid from the Instant Pot reserving 1 cup. Add the chicken, 1 cup of bbq sauce, and cream cheese, to the Instant Pot. Turn the Instant Pot onto warm and cover for 5 minutes or until the cream cheese is warm. Stir to combine.
- Add in the remaining ingredients (shredded cheese, ranch mix and bacon) and stir until well combined. Serve on toasted buns. Enjoy!

Yeah, I have a small family so I make 1 chicken breast. You could definitely double though!!

Everything should stay the same if you double it, unless you end up stacking chicken breasts on top of each other. If that is the case you may have to add a few extra minutes of cook time.

You say to add chicken stock, bbq sauce and brown sugar to the liner in step 1.
In step 2 you say to add 1 cup of bbq sauce with the shredded chicken and cream cheese. Is that the 1 cup that you reserved when you removed the chicken? If so then I think you may want to clarify your directions and refer to it as the 1 cup bbq sauce that you reserved from the initial cooking.
