There are a billion different ways to bake a brownie – and most of them are good! But if you’re looking for *the* very best brownie, it has to be absolutely, undeniably fudgy. If that’s what you’re looking for, you just found it. In my opinion, there is nothing better than the perfect fudge brownie, so I’ve invested a lot of time crafting a recipe that will satiate your need for FUDGE while keeping the integrity of the brownie intact.

What makes Brownies Fudgy?

The more you stick around here, the more you’ll find just how much science is involved in getting the perfect bake. In this case, the perfect bake being incredibly fudgy brownies. This fudgy brownie recipe is engineered to give you the best fudge-like brownie texture every time you make them. A couple of contributing factors include texture enhancers like corn syrup and cornstarch that will increase the fudge factor of these brownies by at least 100. Additionally, we add 3 eggs (which is kind of a lot) to also help in creating this fudgy brownie recipe. Then, we get into the process – beating the butter & sugar then the eggs + vanilla for a combined total of 10 minutes before just barely incorporating the rest of the ingredients to really seal the deal. But don’t worry – there’s more on that later. In short: this fudge brownie recipe is literally designed to give you fudgy brownies.

Fudge Brownie Recipe Ingredients

  • Salted butter, partially melted – I always use salted butter! You can sub unsalted, just be sure to add an extra pinch of salt to the batter. 
  • Granulated sugar
  • Eggs
  • Corn syrup – You can omit the corn syrup, if desired. This just helps give your brownies that ultra fudgy texture we are looking for. 
  • Vanilla extract 
  • All-purpose flour
  • Dutch-processed cocoa powder – You can also use regular cocoa powder, if you prefer! 
  • Cornstarch 
  • Salt
  • Baking soda

How many eggs for fudgy brownies?

There are a lot of eggs in this recipe (3), because that helps these brownies be ULTRA FUDGY – just how we like them.

How to make Fudgy Brownies

  1. Preheat the oven to 350° F.
  2. In the bowl of a stand mixer or with an electric hand mixer, cream together the softened butter and sugar for a full 5 minutes.
  3. Add the eggs, corn syrup and vanilla into the mixture, and beat for another 5 minutes.
  4. Add the flour, cocoa, cornstarch and salt, this time mixing until just combined. Do not over mix at this point.
  5. Spread into a parchment lined 9×9 pan.
  6. Bake at 350° F for 20-25 min. The internal temp of the brownies should reach 170° and then they are finished cooking. They are meant to be FUDGY, over-baking them will make them dry and cake-like.
  7. Allow the brownies to cool completely before cutting if you’d like crisp edges, or allow the brownies to cool for 30 minutes if you just want warm brownies and don’t care what they look like. 🙂 ENJOY!

The ingredients in this fudge brownie recipe are designed to give a super fudgy brownie! But on top of that, following the process of mixing certain ingredients for a long time and barely incorporating other ingredients will give you the texture you’re craving.

I love these brownies by themselves, but you can also add in chocolate chips/chunks or a yummy brownie frosting as desired.

Fudge Brownie tips and tricks

I know I’ve said this before, but it’s key: DO NOT OVER BAKE THESE BROWNIES. The internal temperature should be 170°. If it’s baked any more than that, the texture will go from fudgy to dry and cake-like.

How to store Fudge Brownies

Once your brownies are cooled, store them in an airtight container on the counter for 3-5 days.

Fudge Brownie Recipe

Fudge Brownies are thick, chewy and gooey! The fudge chocolate frosting is poured hot onto warm brownies; the two kind of blend together to make one extremely rich, Fudge Brownie.
Prep Time: 15 minutes
Cook Time: 20 minutes
Rest Time: 30 minutes
Servings: 16 brownies

Ingredients 

  • 1 cup salted butter, partially melted
  • 1 3/4 cup granulated sugar
  • 3 eggs
  • 1 tbsp corn syrup
  • 1 tbsp vanilla extract
  • 2 cups all-purpose flour
  • 3/4 cup dutch-processed cocoa powder

  • 1/2 tsp salt

Instructions

    Yum & super sweet! but mine looked more fudgy than the picture & not sure when was supposed to add the vanilla & pudding.
